Quartzite Countertop installation issues

Some advice would be helpful from folks who have been through this before. We're installing Sea Pearl Quartzite into our new kitchen. We adore this stone. It seems like our fabricator has very little experience with it and it shows. We are also the type of folks who are very detail oriented and SEE all of the little bobbles and misses. He broke 2 of the 4 slabs prior to fabrication just in handling them. We are supposed to have 3 inch mitered edge on all faces and there is a wide range in his tolerances for that with differences of over 1/4 inch in places. He's broken corners. There are cracks on most of the mitered faces in one place or other. He cracked 2.5 of the 6 holes he had to make for sinks and things between our laundry room and kitchen. Is quartzite truly this difficult to deal with? I know it ranks high on the Mohs hardness scale (it's a solid 7 of 10).

We really don't know what to do at this point. Here's some example pictures of what we're dealing with. These are just an assortment of many issues. We've communicated to our general contractor. He's communicated to the fabricator. Contractor wants to give the fabricator a chance to make it right and fix and blend in the errors. We're afraid of the damage that might happen if we want parts redone. We're getting frustrated and are just wondering if it's us. Are we too fussy? what should we do?

We've never done a project to this magnitude and expense before so we're coming to you guys.

Here's a selection of some of the issues but aren't exhaustive of all issues.
