How about a nice crisp green salad to go with the ham and potato salad. Or one of my favorites, a tomato salad if those are good in your stores right now. I shopped earlier today and bought a small prime rib for easter. It almost looks like a very fat steak, hope it isn't hard to cook medium rare. And strawberries, they looked wonderful today. I might do a shortcake although we eat berries with dinner many nights. I bought granny smiths for an apple pie too - leftover pie never goes to waste here. Just two of us for dinner also.

I made green beans tonight from Mastering the Art of French Cooking, adding a dash of nutmeg. That would go well with ham, especially with nutmeg. Easy and delicious. But, how about a salad with pineapple? Pineapple goes well with ham. You need some greenery, either beans or lettuce.

Ham, a corn pudding, a spinach salad (dried cranberries, glazed walnuts, red onion and gorgonzola)....Hawaiian dinner rolls with butter. Carrot cake for dessert.

I'm making a spinach salad with strawberries and pecans and a raspberry vinagrette to go with our ham and potatoes. It's nice and fresh and tart to counter balance the sweetness of the ham and the richness of the potatoes. Trifle for dessert with white cake, lemon curd, strawberries and whipped cream. Melon and prosciutto to start.

You said he likes peas.....maybe with carrots & sliced almonds?

I'm assuming he likes carrots since you mentioned them...? If so, you could roast them. Cut them in large chunks (1 1/2 to 2") and toss with olive oil, s&p. Roast at 400 for about 15-20 minutes until caramelized and tender. Toss with chopped dill or parsley.

If he likes lemon, you could do something simple/light for dessert like lemon curd and berries. Very easy to make a small amount of lemon curd or buy some. Layer it parfait style with the berries.

If the ham is going to served hot I would serve it with potatoes au gratin instead of potato salad and a green vegetable like peas or green beans. If It's to be served cold then the potato salad and a mixed green salad or a raw vegetable platter.

For dessert maybe a lemon mousse or a berry tart.

I think we are going with strawberries in milk with a little sugar for dessert. I really want potato salad and we just finished off a hot, cheesy, potato casserole so didn't want to go with that type of food so soon. I'll read off all your side dish/veggie suggestions and let him decide. Thanks!

It's just the 2 of us for Easter so I'll be making a small ham with pineapple, vegetarian tsimmes and oven roasted broccoli...

Another thing I'm not making but goes well with ham is baked beans.

7 layer salad=lettuce/gr pepper/bacon/hard boiled eggs/cheese/onion/mayo ; Deviled eggs; Pineapple casserole; ham; cheesy potatoes, baked beans; carrot cake.

Strawberries with whip cream.

A Mandarin Salad might go well with the ham. I bought a Chocolate Pudding Pie from Save-On (Overwaitea) as a treat for SO and had forgotten how much I loved it. Wasn't going to have a peice but just couldn't resist.

There are many versions of delicious warm or even hot potato salads (espec German style) that I like better than the blah common cold style of potatoes and mayonnaise

I love warm German potato salad, I think there is a version with apples which would go well with ham.

My mom would often serve this salad with ham or other cuts of pork...always a hit. A mix of greens (Spring Mix is good), red onion, chopped celery, Mandarin oranges and candied pecans. Toss with this dressing...

2 T. sugar
2 T. red wine vinegar
1/2 tsp. kosher salt
1/4 tsp. ground pepper
3-4 dashes Tabasco sauce (to taste)
1/3 cup vegetable or canola oil

Kathsgrdn, did you say where your student is from? My dh is from India and finds most American food too bland for words. He "Indiafies" any bland food we have, for himself and any of our family who prefer it that way. Our Christmas and Easter tradition is to have a latke brunch, so he adds coriander powder and fresh, cumin, chilies and I don't know what all. I still prefer mine in its original form but he has brought most of the family over to his way of thinking. :)

One of my traditional Easter dishes is a marinated vegetable salad - a mix of peas, corn, green beans, sweet pepper (or green if you like), scallions, celery in a red wine vinegar/oil/sugar/salt marinade. I usually put it together the night before, but don't add the green beans until the next AM because they will discolor a bit; and garnish with fresh parsley.

I would make Bisquick "shortbread" to serve with strawberries and cream.

Sjerin, he is from France. He decided on carrots, and green beans. Found some pretty multi colored carrots in Trader Joe's today and so we will "grill" them in the toaster oven. We got up extra early to go to a bakery in Lexington so he could get a baguette. We also picked up a couple other bakery items and we had fun trying them when we got home.

Sure, Eld, but I have no measurements, my mom never measured anything.

Potatoes, onions, boiled eggs, sweet pickle relish, Miracle Whip, just a little mustard (plain like French's yellow mustard), salt and pepper. Sometimes she'd sprinkle it with paprika on top but when I tried to do that I noticed my paprika was dated 2014. : O

We love baked beans with lots of bacon Made with molasses. Great for leftovers too.

I like potato salad with ham. For Easter for two I would make ham, potato salad,rolls and mac and cheese. Heavy and starch ridden yes but I do NOT care about health and vitamins and that kind of stuff for holiday meals. Ever. Every other meal in the year yes. Not holidays. My potato salad has potatoes,eggs, green onion,and lots of fresh dill. Celery if I am making it for family. If its just for me I leave it out because I think its useless. I prefer a smoked ham over a baked, sugary sweet one.
