I wouldn’t do a second cooktop. For those times you need the extra cook surface, I’d get a freestanding induction burner. I’m not loving the second fridge in the middle of your cabinet run either. I’d go with a portable induction burner and second fridge in garage.

Why do you need 2 of either? Is this a Kosher kitchen?

I think I’d prefer one range and one fridge, especially since the temperature in your garage is, I assume, pretty moderate year-round and thus able to be used as a location for a second fridge. And if you only have one fridge in the kitchen, a window doesn’t need to be blocked: it could go where you have the cooktop in the first picture (fridge in second picture) in your OP. Additionally, if you think you need more than four or five burners, you can accomplish that either by buying a bigger range (e.g., 48”) or a bigger range top (again, maybe 48”) plus separate wall oven(s).

No to two cooktops and two fridges. If you need extra fridge space, put one in the garage, OR get a larger one in your kitchen. I'm getting a 48 inch fridge for the kitchen. I need more room that my current 42 inch has.

Is your fridge or your freezer the problem? If it's the fridge, then get a large all-fridge for the kitchen and move overflow fridge and freezer to the garage. If the freezer is the problem, put an all-freezer into the garage.

All-fridge and all-freezer is more expensive, but ends up using space much more efficiently. One way to mitigate the cost is to buy a commercial model. They tend to give you a lot better bang for the buck. Unfortunately, they also tend to be more noisy. So, that's probably only an option for the garage. We have a "True" fridge in the garage and really like it.

If you need more than 4 burners (30" range or rangetop) or 6 burners (36" model), you should review your cooking style. Even restaurants often make do with that. The trick is to use your oven(s) much more extensively. They are a great tool whenever you need to cook things for a long amount of time.

In other words, I wouldn't double up the stove or the fridge, but I certainly would get additional ovens if that fits the budget and available space.

What type of electric cooktop do you have and how old is it? If it is not induction - I can’t imagine wanting to keep it. Since you have solar and are concerned about gas usage of the gas cooktop on your duel fuel range - way aren’t you considering an induction range instead? I have solar and have induction cooktop and 3 electric ovens (30”, CSO, Speed), but I do have 2 propane powered tankless hot water heaters, outside gas side burners, and a gas fireplace. We fill our 250g tank about every 16-18 months.
