Comments (35)Plllog, my older sister has never used her oven and no way has she boiled pasta,😂...so I know what you mean. Five+ years, in her new home, while visiting, I was forward adamant that she remove the manuals from the oven interior....fire hazard if someone visiting might turn it on...plenty of room in the empty cabinets above. 🙄 Her few friends she walks with every day call her home, "Sherwood Suites". So void of a warm home with minimal needs. They even stocked her kitchen with some tea and mugs and a kettle for a sit down visit after their walks. Supporting non-cooks, kitchen comfort...such a challenge. Why I suggest baby potatoes for any roasting....no knife skills needed, 😂. JacquePepin has a 3 hour 2020 filmed 'kitchen basics'. Comments (12)I also tried it tonight. I used 7 oz of feta because the real greek stuff came in bricks of that size. I modified the recipe by using red onion (not shallot) and added some broccoli at the end. I used fresh basil at the end because that is what I had on hand. I used a 9x13 roasting pan to roast the mixture but had to lightly mash the tomatoes and added hot pasta water to make the feta more creamy. I then added the pasta, broccoli and chiffonade basil. I found it a very rich dish, however, even with the broccoli to break up the richness. I might boost the pasta up to 12 oz the next time (I used penne) and lighten up on the oil as the sauce ratio is pretty high. I think the basic ingredients of feta, tomato, garlic, onion/shallot and oil could be adulterated in any direction by adding meat and/or veg and changing the herb mix....See MorePerusing zucchini recipes
Comments (42)We make zucchini bread but mostly use just the green skin with some of the pulp for a more vitamin and phytochemical rich rendition. Organic, very fresh zucchini are best. An Indian friend used to cur zukes in half lenthwise. She scooped out most of the pulp and mixed sime of it with cooked rice, nuts, herbs, curry seasoning then re-filled the zucchini halves with this mixture. Baked a while. Comments (19)Something easy with tomatoes and basil. Only cooking involved is the pasta. Homegrown tomatoes make a big difference here. I like to add some bocconcini. Summer in a bowl.🍅💛 Fresh Summer Tomato Sauce 2 large ripe tomatoes, chopped (or any good tomatoes) 4 T. olive oil 1/4 cup chopped basil leaves 1/4 cup chopped scallions 1 T. chopped fresh oregano 2 cloves garlic, minced 1/2 tsp. kosher salt, or to taste 1/4 tsp. freshly ground pepper, or to taste Freshly grated Parmesan, for serving Pasta of choice Combine tomatoes with 1 T. of the olive oil. Add remaining ingredients, except Parmesan, and toss to blend. If using same day, cover and let sit until serving time. If not using the same day, cover and refrigerate.
