One of my favorite quick and delicious meals. Love this recipe.

I’ve had great results from some of Tieghan’s recipes. Try checking some of hers with ”street corn” in the title.

Just thinking since it’s also hot here in SoCal, this Caprese Pesto Orzo recipe could be good without the oven with some tweaks. That is, if you have an abundance of homegrown cherry tomatoes.👍🏻

This is a similar recipe, in that it starts with roasting cherry tomatoes. We make it often, sometimes mixing the pearl couscous with quinoa.

Sounds good - I will try it. I wondered about the instructions to pour any excess oil off. Seems like it would be difficult to pour anything out of a 9x13 pan without the dumping the whole thing.

I stir the pesto well before adding it and have never had any excess oil to pour off.

Chloebud, I make a similar version during my Sun Gold harvest. Tomatoes halved, minced garlic, lemon zest, fresh basil, salt, and olive oil.

@chloebud I made a batch of fresh tomato sauce earlier this week. I make mine very similar but we like green and red peppers and onion added. I also add a bit of sugar. I know some don't like sugar in their sauce, but it does cut the acidity. I freeze mine. We either use it as is or I add meat to the sauce once we use it. YUM! I had a smallish batch this time, so I will probably do another small one to have on hand this winter.

I’ve been making lots of Tieghan’s recipes for years now and have enjoyed them all!

Okay - I made this. It was good and so easy. I could only find a 6 oz jar of pesto so went with that, one container of the sweet cherub grape tomatoes and I added a few tablespons of canned great northern beans for protein, also a little parmesan on top with the mozzarella. It was a little dry - probably due to shortage of pesto or I might have gotten by with cooking it less than 12 minutes during the pasta stage. I like spicey but may have put a few too many chili flakes in it. I will probably make it again and maybe add hot italian turkey sausage instead of the beans and find an 8 oz jar of pesto. It would be a more complete meal for DH who doesn't consider a meal complete without some kind of meat.

TikTok Feta Pasta is a great dish that doesn't require garden fresh cherry tomatoes which means you can make it any time of year. I use Greek feta and add whole cloves of garlic (5 or 6). I also cut back on the olive oil. I bake it at 400 for 35 minutes.

Judi, French feta is also good for the TikToc recipe. It’s a little smoother/creamier and less salty. I’ve also tweaked the recipe by omitting the pasta to just smear on some good ciabatta.
