I think you can easily do a stainless hood, but what are you doing about the window?

Hood in first photo will be ineffective for the reasons we have discussed here many times. Please search for and read the forum's hood threads, or at least a modest fraction of them, to gain some insight into what you need to do to provide effective cooktop ventilation.

Megs1030.....I haven’t thought about the window. The current hood vents to outside so this hood would sit below window.

I think it looks better with cabinets on top, too (i.e. I don't like your neighbor's set up, it looks weird). But, a ducted under-cabinet hood is going to look a lot better than a chimney hood in your space IMO.

Cabinet hood. I think the stainless ones you have pictures are quite unattractive and the cabinet style is more in keeping with you traditional style.

The hood needs to encompass and trap the rising and expanding cooking plumes. The capture only works if the hood is large enough, and has a means to block escape of the plumes. In the example I commented on, the only intake area is the small (meshed?) zone in the middle, and that is raised relative to the cylindrical shaped part, reducing any side-slip of a plume portion into the mesh area. Otherwise, rising plumes blocked by the cylindrical section either reflect out immediately or slide toward the top where they slide out the front or back area. Some hits the mesh and is pulled in, and some close to the mesh is pulled in. At a minimum that shape would have to be a spherical section and larger.

Fundamental rule: The closer a residential hood conforms to a commercial hood, the more fully and efficiently it will perform its main functions of capture and containment.

Second fundamental rule: Hoods do not suck up plumes from the cooktop; they make use of the plumes' momenta to bring the plume to the hood where it can then be entrained into the air flow created by the hood or duct system blower.

Third fundamental rule: No air leaves via the hood that can't be replaced via some method of make-up air (MUA), either house leakage, a passive duct, or an MUA blower system.
