Christmas Baking, Cookies part 2: The Princess bakes

Yes, THAT Princess. You know, the Monkey Princess, she's been cooking and baking and insisting that I put her pictures on the Cooking forum for at least the past 15 years. She's 17 now. (sigh) Many members will still remember when she was born and it just doesn't seem like that long, but it is.

She's driving, of course, and has a job, but still makes time to bake with Grandma, mostly to placate me I think. She needed Christmas cookies to take to work, and some for her friends. First she had to eat a cookie, one that she had decorated earlier.

Then, we baked...

Yes, that's her "little" brother in the background, he's 15 now. (sigh) And if cookies are involved, you'll find him there, LOL.

We started with her favorite, chocolate peanut butter no bake cookies. I reminded her that when she was small she HATED oatmeal, and so wouldn't even taste the no bake cookies. When she finally tasted one she loved it, and I keep telling her she's going to have to eat more to make up for all those years she could have been enjoying them and missed out.

She is also very talented, because she is the only person I know who can cut the palm of her hand on a cookie scoop, LOL. She says it's because she's left handed, I say it's just a gift. (grin)

Anyway, we kept on baking, and made her second favorite, snickerdoodles:

She came over after work and by the time we finished those it was about 10 pm, so one more cookie. She wanted to try a new recipe, White Chocolate and Peppermint cookies. They were chewy and good, although quite sweet. She broke up the candy canes with my mortar and pestle while I made room on the freezer in the garage for more cooling racks. We were trying to hurry the cooling process along so she could get home, and the garage was pretty cold, so that worked well.

OK, I think that's enough cookies for this year, although now I really want to try those cranberry lemon bars that Olychick posted, the one from the NYT recipe site.

Pattico ~ I made some of those a week and a half ago to take to work. They are lucious. I've also used pretzels and Spanish peanuts. Connie ~ I think you and I have the same recipe. Colleen, I can only say that you should be sure they are at least written down. My family had/has several "secret" recipes that no one knows how to make because they were family secrets and younger generations just aren't interested enough to ever obtain them before elderly family members died. I was guilty of that myself with some of Grandma's recipes, but fortunately she shared them and so I found other family members that still had them years after Grandma was gone and I finally decided I wanted to make them. I have a cousin who, when her Mother died, just rented a dumpster. When I asked about old family movies, hoping to have them put onto DVDs, she told me that she didn't think anyone was interested in all that "old stuff" and they went into the dumpster with pretty much everything else that wasn't worth money. (sigh) I know we've had this discussion here before, but today's generation just isn't as interested in "family heirlooms", they are more mobile and have less space and different lifestyles. Someone might want those recipes later, though, and hopefully they'll be preserved in some way. Annie

I found the Eggnog Snickerdoodles on the cooking forum years ago. I made them last night and they were very good! I couldn't find Brandy extract so I just used cognac instead. I also added a little bit of cinnamon. Eggnog Snickerdoodles 2 3/4c flour 1 1/2c sugar 1 c butter, softened 2 eggs 2 tsp cream of tartar 1 tsp baking soda 1/4 tsp salt 1/2 tsp brandy extract 1/2 tsp rum extract 1/8 tsp nutmeg Sugar mix: 1/4c sugar 1tsp nutmeg Mix butter and sugar. Add eggs and beat. Add flour, cream of tartar brandy and rum extract, salt, soda and nutmeg. Mix well. Chill. Shape into 1 tsp sized balls. Roll in sugar mix. Bake 8-10 minutes at 350Â° or until cookies are lightly browned. Yields 2 dozen. Recipe easily doubles with no problem.

We've been making pfeffernüsse. The kids are making the traditional coin-sized rounds, but I'm getting lazy--I bake the logs without slicing them, and call the results 'reindeer tongues'. They fit very well in stockings. I also made a double batch of Russian teacakes (same recipe as Glenda's pecan meltaways, but my cookbook calls them Russian teacakes, and so did my mother when I was child). They are my niece's favorite, but she had to cancel out on a visit planned for this past week-end. Guess who is eating the teacakes ... me. They are melt-in-your-mouth good, so I might have to make another batch, or two, before Christmas. ETA, I was also lazy with that recipe--I rolled out the dough 1 inch thick and used my pizza wheel to cut in 1 inch square pieces. After baking, I blasted them with my powdered sugar shaker, once while they were warm, and again after they cooled.

Cookies is one thing, being with Grandma takes it over the top!!!

She's proved that she learned how to bake at your knee. Everything is just perfect!!

plllog, I have stacking racks. The problem is that I can't find the legs that prop them up together, LOL. They don't fit in the drawer with the rest of my cooling racks and so I always forget where I put them!

Islay, it far more fun to bake with others than it is alone.

Jasdip, did you notice the perfect "M" on the tree? Yeah, for Makayla, LOL.

Looks great! Do you ever make almond roca or peanut brittle? I associate those with Christmas. SWMBO isn’t making any this year :-(

What? No peanut brittle?

I used to make it, but no one seems to want it any more. The kids want chocolate and more chocolate, Mother and I both like it but she can't bite it anymore. So, sadly, no peanut brittle here either, it's another one of those things that I'd just have to eat myself. (sigh)

Wow, it's so difficult to believe she's 17! Of course mine are 13 and16, so time does march on. Mine are too far away to bake with me, so I only baked the traditional molasses cookies that everyone loves. I gave some away and I'll probably freeze the rest. Merry Christmas!
