Help me convert this crockpot recipe into a stove top version

It's a copy cat for trader Joe's Harvest Chile.

1 TBS olive oil

1 TBS minced garlic

1 large sweet onion, diced

2 large carrots, diced

2 stalks celery, diced

1 large sweet potato, peeled and diced

butternut squash, diced

2 cans black beans, rinsed and drained

1 bag frozen or fresh cauliflower florets

or frozen rice cauliflower works too

1 pack cooked lentils (Trader Joe's)

1 cup red quinoa

1 (150z) can diced tomatoes

1 (6oz) can tomato paste

1 (15oz) can pumpkin puree

3 cups water or veg broth

handful of cilantro

lime juice

Chile spice mix, adjust to taste:

2 tsp chili powder

1 tsp cinnamon, optional

1/2 tsp nutmeg ,optional

2 tsp oregano

1 1/2 dried parsley

tsp cumin

1 tsp tumeric

1 tsp smoked paprika

1/2 tsp cayenne pepper

1/2 tsp coriander


How would you go about making this? Which spices would you use?

Do I really need the smoked paprika? Is that easy to find?
