I totally agree with drawers wherever possible. They are so much more usable. Make some deeper for larger items if you want.

The wall in question ... as shown w small table and windsor chairs???? I think I’d leave it to unfitted pieces as you say Hoosier / vintage pine storage hutch etc. make sure your task wall has single bowl sink which means 27 or 30 in base cab . And your other cabs should be drawers ... wall cabs presumably??? It’s a long wall no windows ... you’d want at least some glass doors as well. This is a good deal of storage . If anything at all on opposite wall I’d get 12 in depth counter w bookcase type set up below. You could raise the height and add custom furniture feet . But any of this can be done later if at all. It need not match in fact better not to.

A to scale drawing of the whole room not just this wall. What are hoping to accomplish ?IMO this wall as shown is only part of your kitchen so I need to see the rest of the space in a drawing.

How deep is your table?

I don't think you have the depth to accommodate a table and two sets of standard depth cabs/counters (25.5") on both sides and have decent aisles around the table. At best, 12" deep cabinets may fit. I would consider closed cabinets and use them as your pantry...unless you have a separate reach-in/step-in/walk-in pantry elsewhere...do you?

Where is the refrigerator?

I assume you will have more than that small table since you mention a "kitchen table for casual eating" and the table in the picture isn't really usable for that, especially if there is more than one or two of you.

The table should have a minimum of 48" b/w it and the items that stick out into the aisle the farthest on the perimeters (appliance handles, counter edges, etc.) Since all three primary work aisles are along one wall and that's where most of the Kitchen work will take place, then I recommend more than a 48-inch aisle on that side...I would go with 54", at least.

48" should be fine on the other side if there are no counters (which means no one will be trying to work there). If there are counters, then I would want more than 48" on that aisle as well.

An island might work better than cabinets 15' away. Need floorplan sketch to say for sure.

How many people sit at the table? Maybe you could incorporate it into an island to get the best of both - more counters and more storage
