LOL I don't think that I have very good blood flow in my broken foot yet. Dave said that it was cold last night but the knee that is giving me trouble was hot according to him. I'm reading the "Chronicles of Narnia" & it is so long that it is taking me a while but I'm really enjoying it. I don't know about Carrabelle, FL. I don't know much about the panhandle. I am supposed to be working on a scrapbook for Dave's parents' 50th wedding anniversary in July. I haven't been able to find the book. I may have to get it off the 'Net. QOD~My 16-y.o. niece is in Orlando playing soccer & we will probably go watch her or at least go & take her out to do something fun. She is a doll. She stays so busy that she doesn't have time to get in trouble. She is in the band, the school's soccer team & band & she has several of the honor's classes & she runs track, then she is in one of the soccer teams that is exclusive & you have to be picked & like this weekend, they go places for competition. Then Dave & I plan to watch movies & have some of the pomegranate martinis then we will have some Asti Spumanti while watching Dick Clark's show & toast in the New Year. This is pretty much a tradition for us. We were pretty sad the year that Dick Clark was too sick to do the show himself. I have to say that I am so thankful for good friends like each of you. With your help, I will get healthier this year. I'm having an MRI done on my knee on Tuesday. They will probably say that nothing is wrong but it has still been hurting along with my foot. I think this is a good starting point. I looked for the recipe I first used but think it must have been on a rum bottle or?? One thing I've learned is to NOT put the mint in the simple syrup (when making the syrup) instead of muddling it. I did that one time per a friend's instruction and YUCK it made the mojito taste like mouthwash. In a 16 ounce mixing glass, gently muddle together: 1 large sprig spearmint .75 oz simple syrup Add: 1 oz of fresh squeezed lime juice and pulp 2 oz white rum (sometimes called Silver Rum) I use Castillo Silver 3 oz club soda or sparkling mineral water Top with crushed ice and mix until drink is combined and glass is frosty. I used to use club soda, but now use Gerolsteiner mineral water that I buy at Trader Joe's. I've tried other mineral waters, but it's the only one I like I'd not use any other...if you can't find it, use club soda and use a name brand, not a house brand. I like Schweppes the best. Whole Foods has organic key lime juice. They surely have fresh key limes as well. The Original Key Lime Pie 6 egg yolks 1 can sweetened condensed milk 1/2 c. key lime juice 9-inch baked pie shell 6 egg whites (stiff) 4 tbsp. sugar Directions: Combine egg yolks and condensed milk. Mix 8 minutes. Add lime juice; mix 1 minute. Blend well. Turn into baked pie shell. Beat egg whites until stiff peaks form. Gradually add sugar. Swirl onto pie, spreading all around. Bake in 300 degree oven until meringue is pale honey colored.

Why? 1 1/2 cups graham cracker crumbs (10 crackers) 1/4 cup sugar 6 tablespoons (3/4 stick) unsalted butter, melted For the filling: 6 extra-large egg yolks, at room temperature 1/4 cup sugar 1 (14-ounce) can sweetened condensed milk 2 tablespoons grated lime zest 3/4 cup freshly squeezed lime juice (4 to 5 limes) For the decoration: 1 cup (1/2 pint) cold heavy cream 1/4 cup sugar 1/4 teaspoon pure vanilla extract Thin lime wedges Preheat the oven to 350 degrees F. For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pyrex pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes until firm and golden. Allow to cool completely. For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze. For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight. Note: If you have concerns about raw eggs, combine the yolks with 1/2 cup of the lime juice used in the recipe in a double boiler. Whisk constantly over medium heat until the mixture reaches 140 degrees.
