Windmill cookies for crust and Key Lime Pie were great!

I don't have that many unqualified success's so excuse the double post and bit of a brag.

My idea of using Ar*hw*y Windmill cookies instead of graham crackers for the typical graham cracker crust was awesome! Loved it.

And the key lime pie turned out really well too, plus home made whipped cream (another thing I had never done).

I really thought I had cooked it too long and it would be rubbery but it was perfect!

Got lots of kudo's from the guys at work

Yum! I haven't tried Windmill cookies but I have used Peak Freans NICE or Lemon Crisp cookies for the crust. They both turned out very nicely.

Thank you for posting that idea.

I despise graham cracker crust, so never make it.

I love those windmill cookies, so am thinking there just might be a new addiction starting here.

And by the way, congratulations on your success.

Whole Foods has organic key lime juice. They surely have fresh key limes as well. The Original Key Lime Pie 6 egg yolks 1 can sweetened condensed milk 1/2 c. key lime juice 9-inch baked pie shell 6 egg whites (stiff) 4 tbsp. sugar Directions: Combine egg yolks and condensed milk. Mix 8 minutes. Add lime juice; mix 1 minute. Blend well. Turn into baked pie shell. Beat egg whites until stiff peaks form. Gradually add sugar. Swirl onto pie, spreading all around. Bake in 300 degree oven until meringue is pale honey colored.

linelle, if I lived in another state, the vodka would be cheaper, but here in Michigan it's taxed like crazy. I've been known to bring a bottle back from Chicago, but that's illegal. Ahem. Here a pint is $11 and that's for the cheap Popov stuff. Another poster said you had to have good vodka, that affected the taste, so that ups the price. And I'd rather die of whatever ailment than to ever drink vodka, LOL, although I did spring $22 and buy a bottle to make Lemoncello. We drank a little of it mixed with cranberry juice and I ended up dumping most of it out after about 14 months in my refrigerator, I'm told THAT won't last forever. Hey, I wonder how lemoncello would work in pie crust, for a lemon meringue pie. Hmmmm..... Annie

Just need to find some time and I'll make my own key lime pie from these. I've seen some recipes with sour cream. Do you think that's a good addition? Another recipe added 2 tablespoons of lemon juice. And a combo of lime and lemon zest might be nice. Where did I hear that a garlic press is useful to squeeze them? Edit: Here's the real Key Lime Pie. Recipe called for a layer of whipped cream, but I ran out of time ...and had to use a store-bought crust. Doesn't really need the whipped cream at all. Wow. So yummy. So limey, tangy, yet sweet. Better than at the restaurant.

When I make lime pie, I use the Bearss limes that I grow in my yard - I prefer them to Key limes, and they are quite a bit larger and juicier. I can find Key limes (called Mexican limes here), but I prefer the Bearss for most recipes. I also have a Kaffir lime tree, but I use that only in savory dishes. BTW, my limes are yellow when ripe, the same as Key limes, but they are not as tart as Key limes.

Let me add my congratulations, Mary. I like graham cracker crust, but I love those windmill cookies.

I'll bet they'd make a great crust for a cinnamon or pumpkin cheesecake kind of thing, or maybe one of those ice cream based pies...

Neve thought of windmill cookies for a crust...I have used gingersnaps abnd vanilla wafers and chocolate teddy grahams....but never the windmill cookies.
