Comments (3)I went to China some 30 years ago, just when they opened up the country to visitors and I visited some the "factories". They were huge buildings with hundreds of workers on an open factory floor. Each worker seemed to have a specific station and a specific task. Still tasty and colourful with a nice flavour due to the juniper berries. Totora is in the process of making his first Coppa - trouble is he'll eat it all - not that I didn't demolish my first one! It's well and truly gone now. The next project is Carne Salata which is a kind of prosciutto (from Lucca)!!!!...See More- 5 years ago
