Comments (2)I use my themometer..and so I'm not good with times..I got side tracked on Saturday and almost over cooked mine... But yeah about 20 minutes per pound. However I'd check the internal center temp at 20 minutes..just to be on the safe side. I prefer to get that temp to 130-135 pull out of the oven and cover loosely, and let rest. Comments (3)I like "zucchini glop"...my own recipe and my family's name for it! Fry pan which will hold enough for those you will be feeding. Swirl a little EVOO in the bottom Add some thinly sliced onion and some skinny slices of peppers...red...green...yellow...doesn't matter. Salt and pepper lightly and add a bit of chopped fresh garlic and some fresh herbs...any or all of oregano, basil, parsley, thyme, marjoram, savory and perhaps rosemary....don't add too much just a couple of tablespoons at the most....save some to put on top. Then add as much sliced zucchini as you need to use up, salt and pepper.....and cover all with sliced tomatoes, the rest of the herbs and cover and continue to cook ....when the juices begin to run, remove the lid and continue cooking until it's cooked as you like... Top generously with grated parmesan cheese and serve. Remember....if you cook this long enough it will cook down a lot and you can make a very large zucchini cook down enough to make a side dish for 2 or 3! Sometimes I add mushrooms.....sometimes carrots.....sometimes a bit of raw rice to soak up the juice, sometime cous cous or acini de pepe....but I like it best just cooked until no longer watery. Comments (12)Yes, if not dry, corky or cotton, I do this with large zukes. I wash them well. I grate from the outside in to about .75" or 1" because I want a the vitamins and photochemical nutrients, along w a bit of pulp. Set aside. Slice the rest of the very large zucchini longitudinally in half. I leave those parts seed side up for the birds in my compost area. I have a "jelly" bag (easy to stitch one up) into which I put the grated dark green skin and exterior pulp. I squeeze out the juice (you can drink or save for soup, I suppose). Then I use a simple easy recipe for zucchini bread (IIRC Redbook paperback cookbook), but I change some of the ingredients around. Since I express liquid from the grated zucchini, I can and more of it. I use some of the AP flour, but add some fresh (keep in fridge) bran flakes. I add raisins and chopped walnuts. Maybe I put a bit more leavening in as well. This gives me a more nutritious zucchini bread (than the go hum recipe) and I the tiny flecks of green skin look healthful. The loaf has good structure and texture and slices well w a bread knife (thin serrated one). That particular recipe includes a few spices like cinnamon and ?allspice or nutmeg (offhand, I can't recall). As for the composting and seeds, you can scrape the seeds out for the birds, then just chop or purée then compost the rest of the squash if you want to avoid attracting critters.
