Hamburger meal to a Family

Friday I'm taking grilled hamburgers and sides over to a family for dinner that night. They will eat soon after the arrival of the food. Ideally, the family are all assembled and at the table when I arrive lol but that never happens!

So the question is, would you grill the buns (brushed w/butter) or just leave them untouched?

Or grill and insert hamburgers into the buns and return to the bag. If I did this I wouldn't do all of them that way.

or leave the buns untouched. Good quality buns btw. probably Sara lee Artisan.

I've played in golf tournaments where there were hotdogs/hamburgers prepared a bit ahead, and they'd put them in buns and wrap them in aluminum foil for players to pick up.

I haven't made it in a long time since I preferred bison burger for the task, and I just can't fit it into my food budget anymore for a "snack food" these days. The reason I like bison burger is because it's very lean - which is essential for this project. I use a NESCO American Harvest Dehydrator and the American Harvest Jerky Gun. The gun extrudes the ground meat into flat ribbons and round sticks (two different diameters), and I'd suggest using this gadget to make the task easier. If you have a pastry bag you could probably use it to form the jerkey using a wide tip or round tip. I liked to make the "ribbons" in bite-size pieces so they dehydrated much quicker and as an additional food-safety precaution. Be sure to read the information from the National Center for Home Food Preservation - Jerky - at the link below for the food safety tips. For seasonings, I used the seasoning and cure packets that came with the Jerky Works Kit because I received a lot of them as a gift. These packets are available in most places where they sell American Harvest Dehydrators or on-line, and come in a number of different flavors. You can find any number of recipes for ground beef jerky on-line that will work just as well. 1. Only use EXTRA lean ground beef, game or poultry. If you are grinding your own meat be sure to remove every bit of visible fat. If you are using poultry, don't use the skin. That's where the highest concentrations of bacteria are located. 2. Dry the jerky at 155-degrees F. After the first hour turn each piece over and blot the oil from the surface with a paper towel. Do this periodically throughout the drying process. Depending on the thickness and length of the jerky pieces, it will take from 4-15 hours to dry. Dry until jerky is hard and leathery. 3. As with all jerky you need to heat treat it to eliminate the potential for bacteria growth. You do that using this method for ground meat jerky. Heat the dried jerky in a 275-degree F oven for 10-minutes after the dehydration process. The other method is used for meat that is marinated. You heat the meat in the marinade prior to drying by bringing the temperature of the marinade with the meat in it up to 160-degrees F. 4. Store it in the refrigerator, or in the freezer for longer storage time. Even lean meat has enough fat remaining in it to quickly go rancid if stored at room temperature. 5. Whole foods are Nature's original "fast" foods and are great for busy people with odd schedules. By choosing whole foods, you'll eat more wholesome foods and less processed foods. You may also find making one change at a time a way to break old habits and create new ones, until you have your meal plans the way you want them. I have a general meal plan where the days can be used one for another, when necessary. If you don't have a "map", it's difficult to know where you are going. MONDAY: Big Meal - large cut of meat and all the fixin's. This ends up providing leftovers, sandwich meat, stir-fry ingredients, freezer foods to use another day. This may be a week-end meal for you. A good meal for the slow-cooker. TUESDAY: Leftovers - they may or may not take on the same form as they did on Monday. If you don't like "leftovers" try them on Wednesday. That extra day makes them nearly new instead of leftover. I prepare 5# of potatoes at a time into mashed potatoes and freeze them in dollops (food portion scoop or ice cream scoop). When frozen, I vacuum seal them in a FoodSaver Bag. Take out what you need and thaw in the refrigerator and reheat, or "nuke" them. WEDNESDAY: Stir-fry (add some brown rice - which can be made once and frozen, and fruit for dessert) This is a good way to use up veggies in the crisper drawer or frozen bags of stir-fry veggies - or a combination of the two. I usually prepare enough meat from this meal to use in a salad or on a wrap later in the week. THURSDAY: International - something as simple as a taco salad (and other simple South-of-the-Boarder favorites), Jamaican Steak, Chicken Teriyake, spaghetti, etc. Baked potatoes topped with chili (that you had in individual servings in the freezer), plus a tossed salad and some fruit. I portion all soup/stew/chili in small plastic containers. When they are frozen, I pop them out of the containers, stack them and vacuum-seal them in a FoodSaver. Take out the number of servings needed, re-seal the bag and toss it back into the freezer. Thaw the next days portions in the refrigerator overnight. I fix 5-pounds of hamburger with taco seasoning in it and freeze it in portion-size containers. You can use canned beans or prepare them in advance. Leftover beans will freeze well for use the next time. I do the same with meaty spaghetti sauce, which has a lot of uses. I make Hamburger Stroganoff and freeze the meat mixture and cook the pasta or rice, or use freezer rice or leftover from Stir-fry night. Take advantage of the salad bar at the grocery store for small amounts of fresh chopped veggies for things like stir-fry or pizza toppings. FRIDAY: Vegetarian (or Fish/Eggs/Cheese) I make up a large recipe of baked bean burgers and keep a stack in the freezer along with homemade burger buns. I prepare several cans of tuna into tuna patties and keep a stack of them in the freezer. Grilled fish. You can also enjoy "breakfast" type foods. SATURDAY: Soup and/or Sandwich SUNDAY: Homemade pizza, something on the grill, or a dinner salad topped with meat and/or beans. We nearly always have fruit for dessert. Chicken (or turkey) with stuffing casserole Chicken Stuffing Casserole 4 thin chicken breast halves or slices, I used thin slices 3/4 to 1 cup, 2 to 3 stalks, diced celery 1/2 to 3/4 cup, half medium, diced onion 1/3 cup all purpose flour 2 to 3 - 1/4 cups chicken broth 3/4 cup milk 1/2 teaspoon sea salt, or to taste, plus more to season chicken 1/4 teaspoon white pepper, or to taste, plus more to season chicken garlic to taste 1/4 - 1/2 cup margarine, melted 1 small box Stove Top Chicken Stuffing Preheat oven to 400 degrees F. Grease, Homemade Cake Release, 12 x 8 pan. Rinse chicken breast slices, or halves, and pat dry, Put in pan. Lightly season with sea salt and white pepper, and garlic. Grease, spray or add 2 Tablespoons margarine to a non-stick skillet. Add celery and onions. Season to taste with salt and pepper. Cook 4 minutes, or so, until soft. Whisk flour and 1/2 cup chicken broth until flour is dissolved. Pour into skillet with remaining 1 1/2 cups chicken broth. Continuously whisk in skillet so no lumps form. When thickened, stir in milk. Pour over chicken. Top with Stove Top Stuffing. Pour melted butter over top. Cover with foil. Cook 35 minutes. If stuffing is not "poofed" enough for you, drizzle additional chicken broth over the top to lightly cover. Return to oven, uncovered and cook another 5 minutes or until bubbly and just right for you! NOTE: You may want to toss stuffing with 1 - 1/4 cups chicken broth before topping chicken. And/or increase margarine to 1/2 cup. I changed the amounts in the recipe. I used thin chicken breast and didn't need to add the additional broth.

Sleevendog, the wonderful thing about belated Birthday well-wishes is that they extend the happiness : ) And thank you both (Islay, too) for the Charcuterie Definition. I didn’t know the French pronunciation, but doubt I’ll use it here, or even the word charcuterie. Most here would think me pretentious, which is silly as I like to use words correctly. So, does this mean if I make canadian bacon or pastrami (from pork), I can (temporarily) call myself a Charcutier? LOL! Well, I just might anyway! Sleevendog, thank you also for mentioning the free-edge/live-edge board. That was my gift to myself : ) I think it’s so beautiful! I often toss together a board (the bread board above was from an old restaurant, the charcuterie with live edge from Etsy) of cheeses, crackers, meats, apples, grapes… whatever I have on hand, for pre-dinner snacking, or lunch nibbling. I wanted a larger, prettier board than the bread board : ) Funny thing is, when I bought my first furniture, the area in which I lived had tons of furniture with free-edging/live edging (horizontal slice tree trunks, vertical slabs). And they were cheap! And huge! I bought a large one for my coffee table on a major budget. New! After a while, the area was over-saturated with them, and I couldn’t give mine away when upgrading. Truth! So when they first came out, it took me a while to not see them as ‘cheap’ stuff! I have learned a new appreciation… everything old is new again : ) I think it looks both rustic and fine, simultaneously. I am a wood grain lover. And while I have your attention, those flageolet beans? Amazing. We can’t stop eating them on salads. I’m making some with leftover too-salty ribs, shredded, and roasted tomatoes next. Mercurygirl, you sound like me, I’ve moved several plants, including roses. Hard to keep up with where they are until they leaf out or bloom! Naturegirl, you are most welcome! Edie, I have one of those rolling pins! So heavy! I am sure you can roll it out thin enough. I would recommend a few things… if using crackers for cheeses, don’t add cheese to the cracker dough, just make them as is, and perhaps toss in some dried herbs (the flavor of dried herbs does come through) as appropriate. If serving with a soup, or alone, cheese tastes wonderful : ) Annie, don’t do what I did, though, and over prep/cook! I was feeling a bit frazzled by the time the day rolled around! But yes, making lots of nibbles satisfies everyone. And they can be easy ones. BTW, your hummus was wonderful! Thank you! I froze some, and hope that’s ok.

Making up ahead is pretty standard but adults are not usually as picky.

A family of 5-6 with children? (I'm assuming children)

I would take two foil pans. Line one with parchment and place the grilled burgers in the pan, fold over the parchment and cover with a sheet of foil. Toasted buns on top, then cover with foil. (a foil packet of a warm side dish could go between the burgers and buns)

Cold sides in zip-locks in the other pan for transport. Lettuce, tomato, etc.

I bet they would be ready to eat...nothing else to do. Though the burger/bun pan could good in a warm oven if they need to buy some time and the sides into their fridge.

Kids can be picky how they like a burger. Some just ketchup, no cheese.

This is a time to not worry about foil waste. I have a Costco stack I purchased 10 years ago and get used many times, then handy in the garden.

I like the idea of the buns inside the pan with the burgers. They will keep warm that way. I never worry about waste, lol, just food not being as perfect as possible. I want everything to be amazing and look that way in presentation too.

Can you ask the family? If they don't have pickies who don't want their burgers and buns to touch, you can accomodate. In general, I'd rather have the burgers in the buns because the buns get flavored by the meat. OTOH, if your burgers are super juicy and drippy, better not have them soaking through the bun. Your own judgment is probably best. Nice of you to take them a meal.

If you’re not getting specific orders then I’d not toast the buns. Seems to me those who don’t like them toasted are more particular about it than those who do like them toasted. Feel free to toast mine though.

Funny, I never toast buns for burgers. But I do for sloppy joes. And I toast New England hotdog rolls, too. I agree with Food, untoasted would have broader appeal. Especially since the buns will probably steam a bit if you go the layered route in aluminum.

Why we stopped having burgers and hotdogs at big summer gatherings, 😜.

Getting a whisper from a dad that his son likes his hotdog boiled on an un-toasted bun. Short-order cooking how everyone likes their burger and dog is such a chore.

I just wrote above what I would do under the circumstances and what I have on hand today. (and I would make homemade tater-tots,😍)

Maybe toss in a couple un-toasted buns in the cold tray in a clear bag. For a family of six I would go generous and grill 8-9 burgers. A couple extra.

A couple years ago I thawed 4 burger but it was just the two of us. I wrapped up the two extra after grilling, wrapped in toasted buns with caramelized onions and had them for lunch the next day. Sounds gross and would never admit that on-line, 😂, but we both loved them....more like a meatloaf sandwich day two.

Oh good grief. JacquePepin makes a cut dog that spirals in water so it fits on a hamburger bun. (for his granddaughter.) When she was younger. I have some kid type dogs in the freezer so I would add a few of those....

I'm up at 3 am, wait for the sun to rise and hit the garden...hot now and soo bored I need a family or two to cook for!

60º this morning but 85º now.

Think about fast-food take-out.... they make up the whole hamburger and wrap in paper, so that would work fine too.

A bowl of potato chips on top of the foil packets would make a wow impression - maybe with a fancy spray of pickles (in plastic) on each side.

I have been looking for, some more than we 2, somebodies to cook for for 6 years and have never found anyone. I even offered last year to cook for those in retirement homes (having a state-certified "home" kitchen) but could not find any place, even given to them for free! They would not even take my homemade baked goods, nor would the food pantries. Yesterday I took over some organic blueberries that I grow to new neighbors and they said, "No, thanks". I know there are hungry people out there I just can't find them.

Nancyofnc, try asking at the churches and other community outreach groups. Ask your friends if they know anyone who needs a homecooked meal. Put a sign-up sheet on your local social media site. If there aren't any needy (which I doubt) maybe you can make a meal for a hectic family with a parent who just needs a night off cooking. Good luck!

Thank you all so much for all your good ideas! Here is what I'm making, and who is coming.

6 adults and 2 small elementary school-age children. I will make 12, 1/3 lb 80/20 burgers and have a giant tray of toppings that include several different cheeses, lettuce, homegrown magnificent tomatoes lol, onion, pickle, avocado tossed with lime, that sort of thing. Buns

Ina garten's French potato salad and I will double the recipe so it uses 6 pounds of potatoes. This is always beloved and it was requested.

Pam Anderson's peach cobbler and that will get tripled and I also have a carton of Breyers natural vanilla ice cream to go with it.

Watermelon slices

Iced tea

Everything will be served in heavy duty super large aluminum foil pans or attractive plastic bowls, nothing that I have to take home.

This is one of my best friends family and she has a broken arm. Last week I took them marinated grilled pork loin and chicken breast, Redskin mashed potatoes- yes I know that's being repeated somewhat but it was requested, squash casserole, salad with a ton of stuff in it, homemade brownies, cookies and cream ice cream, homemade caramel sauce

they pre cook the burgers at our fall fb concession stands ... wrap them in foil. warm but soggy buns, I would pre cook the burgers in a pan and foil the pan, and then let peeps grab their own buns and use tongs to grab a burger ...
