Untraditional Family Meal Time problem

I'm trying to diffuse my husband's and my dependence on frozen entrees and canned meals, for the prime reason of our health. We've had to resort to those lately, when my husband found himself working swing shift and I work days. This means we're on our own for meals 4 days a week. With both of us on High BP meds and trying to eat "heart-healthy" meals, canned goods and frozen entrees are not the best solution to the meal problem.

Over the summer (I teach), I got in the habit of making lunch into our main meal. It's been pleasant. But now it's time to go back to school. When he leaves on Sunday to go to work, he tells me, "See you on Friday."

One thought I had was to do slow cooker meals - stuff DH can serve himself at regular lunch time, and then I can have it later for dinner and maybe even the next day for my take-to-school lunch.

But I can't do this EVERY day of the week.

Has anyone ever had this problem? And how did you work it out?
