Tiny sourdough starter

I have been working on my sourdough baking skills of late. Between a cooler house and baking in a WFO it has been a bit of a bumpy road but I am improving. One thing I still find difficult is discarding. I have made biscuits, crackers and waffles but I tend to not eat that many flour based foods simultaneously. In addition I have been gifted several other people’s starters. My fridge was being taken over by jars of goo. I just did a fridge clean out. I decided to feed and keep two starters - a rye and a friend’s lively wheat. Plus a mixed one for tomorrow‘s bread. The rest went into the compos. So my question is how small a starter can I reasonably keep going?


Latest bread - The WFO was a bit too hot but the bread tastes good.
