kitchen hood enclosure without upper cabinets

I have attached a photo of the kitchen hood fan insert we have purchased. We will be installing it between two windows in our new build kitchen and it will be venting through the 10 ft high ceiling. We will not have upper cabinets in the kitchen (with the exception of a 9 ft tall pantry section) but the lowers are a natural hickory slab. We had wanted a fully stainless hood at one point but needed a remote for ADA compliance. Not wanting to invest in a super custom hood from a stainless fabricator has left me with whatever our builder and cabinet company can construct for us. The current suggestion is to do hickory up to the height of the pantry unit (9 ft) and then drywall the last foot. We are hoping for light and airy to match the rest of the walls without uppers but the designer has said we need to cover the insert with wood. I understand fire concerns but wonder how others have achieved it. Thanks for any input you all can offer.
