These were good! I got the recipe at Recipezaar. It's the orange zest that makes it a success! I baked in at 375 F for 22 minutes. Might work with cranberries too. Next time, I'm going to add a little orange extract. Just a bit to add a little more orange flavour.. cuz I really like it.LOL Raspberry Orange Muffins 1 cup milk 1/2 cup butter, melted 1 1/2 teaspoons orange zest (I used 2 tsp) 1 1/2 teaspoons vanilla extract 2 large eggs 2 cups flour 3/4 cup sugar 2 1/2 teaspoons baking powder 3/4 teaspoon salt (I used 1/2 tsp) 1 1/2 cups fresh or frozen raspberries (or blueberries) Preheat oven to 400 F; line 12 muffin cups with paper liners. In small bowl, combine milk, melted butter, eggs, vanilla, and orange zest. Sift flour, sugar, baking powder and salt into a large bowl; add milk mixture and stir just until blended; fold in raspberries (I added about 1 tablespoon of flour to the frozen berries so that they don't sink to bottom of muffin). Divide batter equally among prepared muffin cups. Bake until golden and tester comes out clean, about 15-20 minutes.

Hi there! I just came across this cooking forum as I'm usually spending free time browsing the gardening forums. Anyway I seen you are looking for somthing to do your old bananas and thought you might like to try this one. Kids and DH like it just as much or even better than my Pumpkin Roll. Banana Roll: 3 eggs 1 tsp. baking soda 1 tsp. vanilla 3/4 cup flour 2/3 cup mashed bananas 1 tsp. banana flavoring mix all ingredients together until well blended Filling: 8 oz. cream cheese softened 1 cup powdered sugar 3/4 tsp. vanilla 2 tbls. butter beat together until fluffy Spray jelly roll pan with cooking spray and cover with a sheet of parchment paper leaving enough of an edge to grasp. Pour batter into pan and spread out evenly to all sides. At this point you may sprinkle with finely chopped nuts, totally optional. Bake @ 375 for 15 min. Remove from oven and turn upside down on a clean kitchen toewl dusted with powdered sugar. Carefully remove paper and roll up lengthwise. Let set until cool to the touch. When cake is cool, unroll and remove towel. Spread filling to the edges and reroll. Wrap in more parchment paper and then aluminum foil and chill overnight. Cut cake into desired size slices to serve.

fearlessem, I made your muffin recipe this morning, and are they ever good!! I didn't have any walnuts so I substituted some roasted almonds that I had in the freezer - that is the only change I made. Very delicious....! Thank you for sharing - I am definitely keeping that one. :) ~cj

I've made macarons with almond flour, very delicious but a bit finicky. I made some pancakes and they were acceptable, but I made bread and it wasn't. Zucchini bread was better. My daughter is celiac and can't have gluten, so almond flour works in some cases. You can also find a lot of recipes using almond flour on the paleo diet websites and blogs. Annie
