These are yummy! re: new recipes tried

Made the Butter Rum Muffins last night and the Cherry Oatmeal this morning. Butter Rum gets 5 stars from DH! Cherry Oatmeal are a little more healthy!

I'm not sure where I found these, could have been the recipe forum or online? I have had the ButterRum Recipe in my folder for almost 2 years,according to the date, now I wish I'd have tried them sooner!

BUTTER RUM MUFFINS

1 1/3 cups sugar

2/3 cup soft oleo

4 eggs

2 Tablespoons baking powder (yes, this is correct)

1/4 tsp. salt

1 tsp. butter flavoring extract

1 tsp. rum flavoring extract

2 cups milk

4 cups flour

12 oz. bag butterscotch chips

Cream sugar, oleo and eggs. Add baking powder, salt, flavorings then add alternately the milk and flour. Stir in butterscotch chips. Put in greased muffin pans and bake 375 degrees for 25 mins.

**I made regular sized muffins and they were done in 21 minutes**

This one I have only had about a year in my folder! I gotta try new ones more often!


Cherry Oatmeal Muffins

1 cup quick-cooking oats

1 cup all-purpose flour

3/4 cup brown sugar

2 tsp baking powder

1 tsp baking soda

1/4 tsp salt

3/4 cup low fat buttermilk

1 egg, lightly beaten

1/4 cup canola oil

1 tsp almond extract

1 cup fresh or frozen cherries (do not thaw), roughly chopped

PREPARATION:

Preheat oven to 400 degrees. Line a 12-cup muffin pan with paper cups.

With a wire whisk, combine oats, flour, sugar, baking powder, baking soda, and salt in a large bowl. Combine buttermilk, egg, oil and almond extract in a small bowl

Make a well in the center of the oat and flour mixture. Add liquid ingredients. Stir until just moist. Fold in chopped cherries.

Spoon muffin mixture into muffin pan. Bake for 18-20 minutes.

Now I need more eggs to make the Pumpkin Chocolate Chip Muffins! Most of these are going in the freezer, then we'll have a selection to pick from for awhile.
