Mushrooms Galore!

Long time no post, but for some reason, the last few weeks, I seem to have more time on my hands...

Naturally I have been doing a lot more cooking and baking than is sane or necessary, but I happened to have retired February 28th and although I had a lot of plans, most of them are difficult to carry out during this time. So... yesterday I saw an ad on Facebook Marketplace, that a mushroom farm nearby (we have a lot of mushroom farms in the area) was selling mushrooms (button) for 1.00/pound if you bought 10 pounds. I assume that they are hurting due to the reduced restaurant activity, so thought it would be a win/win situation to support them. Sent DH off and he came back with a box. 10 lbs is a lot of mushrooms! Gave them all a quick bath and dry this morning and sorted them into batches for different purposes. The stems will become stock, the big ugly ones will be soup. I picked out 10 nice big ones to make stuffed mushrooms tonight. Another bowlful of small ones will become marinated mushrooms and the remainder will be sauteed in butter with garlic and frozen for use in risotto or omlettes or to top burgers.
