Onion Pie for lunch

Onion Pie


Ingredients:

2 tablespoons extra virgin olive oil
3 cups thinly sliced yellow or Vidalia onions

1/2 teaspoon granulated sugar ONLY if you DON’T use Vidalia onions
1 cup heavy cream
1 cup whole milk
3 large eggs
1 teaspoon crushed black pepper

1 cup shredded mozzarella cheese
2 9-inch pie crusts


Process:

Preheat oven to 350F

Sauté the onions until they start to brown. Remove the onions from the heat.

Whisk together the cream, milk, eggs, and pepper in a medium bowl. Add the onions and cheese and stir to combine. Pour the mixture evenly into the pie crusts.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 40 to 45 minutes. If the crust starts to get too brown, cover it with foil. Remove the pie from the oven to cool on a wire rack. Let the pies cool for at least 10 minutes before cutting.

Pie can be served hot, warm, or at room temperature.
