What are you cooking AFTER Thanksgiving?

I can only eat leftovers for a day or two before the thought of a turkey sammich will make me gag. Not that I have anything specific that I usually eat after the leftovers have turned me off, other than sushi, but I have the unique opportunity to experiment this year.


Originally, we were going to just have the usual turkey dinner. But due to the size of the crowd, I decided that I'll smoke an 18-pound brisket, as well. However, the brisket is too big for the smoker, so I cut off the flat - about 12" of it - and found a recipe for corned beef. It takes five days in the brine, but when it's done, we're going to celebrate St. Patrick's day a bit early with corned beef and cabbage for dinner on Saturday night.


Of course, I'll still be eating cold brisket sammiches on rye bread with mayo, lettuce, and tomato until all the brisket is gone. But I'll leave the leftover turkey at my girlfriend's house along with the can of cranberry sauce that will never make it out to the table.
