Question: In a bathroom remodel, do they open the ceiling below?

We are planning to renovate our kitchen and 3.5 bathrooms next year. We just bought the house and have made some minor cosmetic improvements to two of the bathrooms (ie paint and changing hardware) and it is a bit more liveable. Our budget is not infinite (whose is really?) and we think we want to renovate our basement and are thinking of skip those two bathrooms for now.

Those two bathrooms both site above the kitchen stacked in parallel to each other one over the other.

We have had a few contractors come in. Some have said, we must do the bathrooms when we do the kitchen, otherwise we will have to rip out the ceiling over our newly renovated kitchen which isnt ideal. However other contractors have not said the same. This is our first time doing a renovation and we just arent sure what to believe. Have you had to open the ceiling beneath the bathroom for a remodel? Our house is pretty old, over 100 years. Not sure if that makes a difference or not
