Lemon Elderflower Fairy Cakes

Ever since I read that Harry and Meghan's wedding cake was lemon and elderflower, I have been intrigued by that combination. Fortunately for me, a couple of years ago, my husband gifted with me elderflower cordial (He likes odd things) and it was put on the shelf and there it stayed even thought I wanted to try a lemon elderflower cake.


Today was the day -- not a cake but fairy cakes. A Nigella recipe modified so that they can be elderflower lemon fairy cakes.



LEMON ELDERFLOWER FAIRY CAKES


1/2 c. softened butter

1/2 c. sugar

2 eggs

3/4 c. flour

1/2 t. baking soda

1 t. baking powder

2 t. vanilla

zest of 1 lemon

2 - 3 T. elderflower cordial


Preheat oven to 400.


Put all of the ingredients except the cordial into a food processor and blitz until smooth. Pulse while adding the cordial down the funnel to make a smooth dropping consistency.


Divide the mixture between 12 muffin tins lined with muffin papers and bake for 15 to 20 minutes.


Frost with Lemon Elderflower frosting


LEMON ELDERFLOWER FROSTING


1 1/2 sticks softened butter

2 1/4 c. powdered sugar

3 T. elderflower cordial

zest and juice of 1 lemon


Beat butter in the bowl of an electric mixer with paddle attachment. Add powdered sugar and process until smooth. Add lemon zest, cordial and lemon juice. Mix. If too runny, add a bit more powdered sugar. If too stiff, add a bit of water.
