Updating Honey Oak Home

Our open floor plan home was built in 2001 with honey oak everywhere--cabinets, flooring, windows, baseboards and trim, doors and fireplace mantel. We are in the process of updating the fireplace adding a Southern Ledgestone front. The fireplace wall is adjacent to our honey oak built in entertainment center. We will also be refinishing our floors. My husband does not want any of the oak painted. I am wondering if I can change the stain color of our floors and new mantel? With the trim being honey oak, I am concerned about making a mistake. The soft brown color of our armoire in the eating area is the color I am contemplating staining the floor and fireplace mantel. Would this be a mistake? Or, should I continue with the honey oak stain that I do not like since I will not be refinishing the trim? Please make recommendations.
