Comments (7)The best squash soup I've ever had was at a businessman's club in Saskatoon that we were once invited to. It was made with pumpkin, and basically contained much the same spice mixture as pumpkin pie, yet was savory and totally delicious. Have been trying to duplicate it ever since... sigh. Here's a nice one from an old Canadian Living, when it used to be just recipes: Butternut Squash Soup 5 cups chopped squash (~ 1 large) 2 tbsp butter 1 large onion, chopped 1 small sweet red pepper, chopped 4 cups chicken stock 1 cup whipping cream (hey, what can contain cream and not be good! Well, milk can be used instead.) 1/2 tsp nutmeg pinch each ground cumin, ginger salt and white pepper Boil squash until tender and drain. In large pan/stockpot, melt butter, cook onion & red pepper until softened, add squash and stock. Bring to boil, then simmer partly covered for 20 minutes. Puree in batches until smooth (a potentially dangerous step if you're a klutz like me!) Return to pot, add cream and spices, cook another 5 minutes. There's also pesto (1/2 cup each Italian parsley and basil, chopped fine, l large clove garlic minced, 1/4 cup olive oil, all mixed) to swirl into each bowl of soup - a nice touch but it doesn't need it. I think it's fair game to substitute pretty well any similar sort of squash in recipes, although butternut is certainly my favorite for soup (until I happen upon that elusive pumpkin soup recipe, anyway)....See Morebutternut squash soup

Clive thinks he hates curry so I never would have done that but he gobbled up the soup and said it was the best he ever had. Comments (4)I agree, cook the squash and puree it, then add to soup as you wish. You can also add it to yeast breads, use it in place of pumpkin for quick bread or pies or custard and as Teresa mentioned, it makes pretty good soup on its own. I also make a ravioli filling out of butternut squash. I add kale to bean soup for a "Tuscan" bean soup, but I like kale and other greens. I also made a pasta that Elery liked (but I did not, particularly), with sauteed kale, Italian sausage, pasta and parmesan. I have a homemade noodle recipe that takes basil, I think greens like spinach or kale would work quite nicely in that too. Comments (7)I am a seat of the pants cook.....and I make squash or pumpkin soup like that.... The secret is in the chicken broth. Home made.....cooked with lots of onions celery carrots, parsley, a few carrots, some pepper corns.....strain all out and proceed with your soup.....using cooked and pureed squash or canned pumpkin!....easier and just as good. BUT....if you forgot to start on your soup the day before yesterday....you can get a pretty good imitation of the home made stock by sauteeing some green onion, celery and parsley and some crushed cumin seed....very little, in butter....very slowly....adding flour equal to the amount of butter you used....cooking for a couple of minutes and whisk in canned chicken broth. Then you can either puree the whole mess, strain it or just leave the bits of veggie in there.... Then start spooning in the pumpkin or squash puree and tasting.... I also like some canned green chilis for a bit of bite.....and a splash of dry sherry.....and I often stir in some sour cream.
