Need a white paint for a Northern light apartment

I know this has been asked before but I’m slightly confused by varied responses. We have bought a pre war NYC apartment that is beautiful except for one thing - light. All windows except the kitchen and bathrooms face north and there are buildings across the alley so not a huge abundance of light. I want to paint all white (we have high ceilings with beams and nice,fat vintage trim) ... but don’t want it to read cold and dingy nor too yellow. Research seems to suggest Simply White or other low chroma white colors on walls with a Super White trim... or do I do all the same white just different finishes for walls, trim & ceiling? Am I crazy to bother with white at all? Starting from scratch - no furniture or colors so I wanted a clean, modern blank slate. Any help greatly appreciated especially from color experts ;)
