Cinnamon rolls dry around the edges?

Last week, my first batch of 12 was in the oven for 15 minutes at 400 degrees and could have used another 3 minutes. This was a new recipe for me.

Today, I made my second 'batch of 12' Pioneer Woman's Cinnamon Rolls (see link).

My second batch was in the oven for 18 minutes and the centers were perfect, but the edges of the rolls were dry dry dry, bordering on having a soft crunch but not quite a crunch.

Should I have covered the 9 x 12 glass pan with foil? For this second batch, I'll be piling on a lot of cream-cheese-butter-maple syrup "frosting-icing."

Oh, and here's something that was meant to be a compliment, I guess. DH said they were really good, and asked if I "made them" (he meant did I make them from scratch). I told him they were made from scratch using a yeast dough. He said they were really good, "just like store-bought." Humpf!
