Comments (3)Caution adding cinnamon to yeasted bread dough. Cinnamon contains a chemical compound (cinnamic aldehyde) which can be detrimental to yeast growth if you add too much in the dough. It is suggested to limit cinnamon to amounts below about 1/4-teaspoon per cup of flour in the recipe, or you may find your dough won't raise properly. If you Google - vegan cinnamon roll recipes, or dairy-free cinnamon roll recipes - you should find a lot of recipes that use non-dairy "milks", including soy, rice or nut milks. Use shortening or coconut oil instead of butter. I almost always use coconut oil in yeast breads instead of butter. I find it helps keep the bread fresher longer. Perhaps a dairy free recipe for Hot Cross Buns with some cinnamon added to the dough or cinnamon added to the icing will work for you for a bun-like finished product, rather than the traditional rolled-out type of recipe. Comments (8)These all sound great! I especially like the sound of Annie's onion and garlic. One thing to think about is that cinnamon roll filling has sugar and fat, which are both liquidy while they're baked, and remain moist when cool. I'm guessing that savories would be better moist as well, and I'm thinking adding onions, mushrooms, cheese, egg yolk, or a vegetable puree to something dryer, like chicken or fish, would make it much better. Also, to contrast with the natural sweetness of the bread, I think IC is right on the money with salt. I remember seeing a pastry similar to that in France, but flat rather than rolled, which had a ham salad inside (salty). Mushrooms and scallions. Chicken Divan (made on the dry side--moist yes, sopping no). Smoke salmon, dill and a little sour cream. Roasted vegetables minced with ricotta (and salt!). I will have to make two batches since there's 5 of us and I'm sure my adult boys will be comming by. I'll also pinch a bit of dough off for my 9 yo thay can't eat cinnamon. Comments (11)LOL!! Sooz, I think (hope) as good as store bought must mean a really good store. There are all kinds of things people do to their dough to wreck it, so homemade is no guarantee of greatness, but I think (hope) your husband must have been joking, trying to push your outrage button. :D I haven't made any kind of sweetrolls in so long I don't even remember what I did, let alone have tricks, but I know two possibly irrelevant things. One is that some people like the dried out bits (beats me why) and perhaps they were supposed to be that way. Also, a collar of foil around the edge helps keep the edges of a casserole from drying out and overbrowning, so it's conceivable that it would help here, considering the middles were perfect.
