cinnamon rolls that aren't rolls?? and dairy free??

OK I know I'm asking two different questions so I hope it won't be confusing, but they are both related to cinnamon rolls.

1. Does anyone know how to make a cinnamon roll that aren't a roll. I love the roll kind, but DH likes them when they are more like a bun and you can't eat it by rolling it out, but eat it more like a yeast roll. Any idea how to make them? Do you roll the dough out and add cinnamon and sugar and roll it together without spreading butter to get the roll look that doesn't roll out when baked or what's the secret?

2. Anybody know if I could use soy milk or something else instead of the milk that all recipes I've seen call for and that my own recipe also need. I guess I could try, but I don't have the time to put in to fail. My daughter is allergic to the proteins in dairy so it has to be completely dairy free. I know I can find margarine at some stores that are pareve to use instead of butter, but the liquid is another story.
