Want to recreate a cookie

There is in Maine a rather odd chain of stores called Reny’s that sell a little bit of everything in a rather odd array of quality and price points. Expensive shoes, boits and socks, polyester tops, cheap toys, no name toiletries, cheap dishes and rather high end foods. Generally I think the expensive stuff is for locals and the inexpensive for visitors going to camp.


Included is an array of fancy cookies. My mom (and I) have recently become overly fond of these oat crisp cookies with a layer of chocolate. I was thinking it might be fun to try to recreate them for a dinner tomorrow nigh. .


So the base cookie is a crisp oat cookie - not terribly sweet. Fairly dense not holy. Maybe made of oat flour rather than oatmeal. Definitely short but not super buttery. Any ideas of base recipes? I plan to replace the thick layer of milk chocolate with a drizzle of dark.
