Comments (12)I only use full sheets, and sometimes I cheat by buying the rice already cooked at the Japanese market - it saves quite a bit of time. I do keep shari rice and nori on hand at all times, however. Here's , which I served with sashimi, pickled garlic, and seaweed salad. I generally buy the Japanese pickles and seaweed salad at the market, since the ones I've made are not as good as what I can buy. I have several books with recipes for Japanese pickles, but mine don't come out right - and I also have a Japanese pickle press. Comments (22)I never cook salmon in a skillet - but then I don't like it crusty. If I bake it in an oven, I add lemon juice, minced dill, black or white pepper, capers, and dot the top with butter (skin side down). I cover it with foil and bake until done - generally about 15 minutes at 350°, depending on thickness. Usually I grill salmon, preferably outside over charcoal. I always put the salmon skin side UP at first and flip only once. I season with olive oil, white pepper, and dill (no salt). I find that salt detracts from the flavor of salmon, and I serve it with lemon, which takes the place of salt. Or I serve it with tartar sauce, which has salt from the dill pickles in it. If I'm grilling inside (instead of over charcoal), I sometimes make it teriyaki style, with a marinade of soy sauce, lime juice, ginger, garlic, and black vinegar. I don't add anything sweet, and so it's probably not a true teriyaki, but I think the fish is sweet enough. Comments (5)LOL, that's a hoot. Be sure though, when sharing sushi to avoid giving them the salmon...there are some kinds of raw salmon ( I believe wild alaskan) that have a bacteria that can be deadly to our buddies. Just an fyi :)...See Moreideas for left over sushi fish
Comments (15)I went with Lars' suggestion of salmon croquettes (in this case, salmon and tuna). I wanted something different than sushi plus I felt that after a day it was better to have the fish in a cooked form. I couldn't resist putting some of my own spin on the recipe. I put in some grated ginger and some toasted sesame oil. I don't keep a jar of mayonnaise around because we don't use it much so I put in some guacamole (figuring that it would add some of the fat content that mayo contributes) - I also thought about just putting in a whole egg instead.
