HMolly here is an example of the Flynn over exactly what i describe in the first the sink and cabinet hood line up and two large pendants are able to frame that for a nice symmetrical look. In this second photo of the Flynn they have used three because the sink and cook top are off center of the center of island and each other that is camouflaged by using three centered on the entire island . With ten feet ceilings if you don’t need to worry about the above predicament i always think going as big as possible looks better and makes a statement so my choice would be two large is the layout handles it. Yes, you certainly could go for two larger pendants and then just close up the other junction box hole. You barely notice it! You could also go for one long linear pendant with one longer ceiling canopy, which may help cover up any unused junction box holes. 2/3 of 60" is 40", so that gives you the ability to look at a lot of different linear pendants that would be proportionate. We have lots of options if you are interested!

Some photos are attached. Island top is 108" x 54", waterfall top, honed black pearl granite. White cabinets. Ceilings flat 9'. Kitchen is open on 2 sides. Need advice on size of pendants if using two oversize pendants. I'm thinking width somewhere in 24" - 36" range depending on height, shape etc... I don't want them to look too big nor too small. I can use 3 pendants also, not set on 2 or 3, not sure. There are photos below of the type of pendants I'm leaning toward as of today but I'm open. The backsplash and hood behind it will be a pretty bold porcelain and I don't want to distract from that either (photos below).
