Pumpkin Scones- for 2ManyDiversions :-)

This recipe is based on a recipe given by a lady who was the wife of a well known politician here in Oz. She was famous for her pumpkin scones. I found them too sweet so I halved the sugar. I have made them with mashed Kabocha and also mashed butternut. (We don’t have canned pumpkin here, nor do we differentiate between pumpkin and squash, unless possibly we would consider pumpkin flesh as fairly hard and squash flesh as quite soft, like zucchini.)


Pumpkin Scones


1 egg

1 cup cold, mashed pumpkin

1 tablespoon butter

1/4 cup sugar

2 1/4 cups self raising flour*


Set oven to 225C-250C/425F-450F.

Mix butter and sugar, add egg and pumpkin. Mix in flour. Turn dough out onto a lightly floured board and cut into scones (rounds are traditional here). Brush tops with a little milk and bake approximately 15-20 minutes.


* If you don’t have self raising flour, I have successfully substituted plain flour with 2 1/4 tsp baking powder stirred through it
