Comments (20)Here's my basic vinaigrette; I've made it for years. If you like tarragon, go for it: Tarragon Vinaigrette Dressing 6 oz Olive Oil (see note) 2 oz White Wine Vinegar 1 tsp dried tarragon 1/8 to ¼ tsp salt (preferably kosher) generous grinding of black pepper 4 to 6 dashes of Tabasco about ¼ tsp of Dijon mustard Put all the ingredients in a container and blend well with a fork or whisk. If you want it a little thicker, put an ice cube in it while blending it, removing the ice cube prior to dressing the salad. It can be made up earlier in the day and stored in a glass container, covered, in the fridge; just whip it up again immediately prior to dressing the salad. Makes about one cup. Note on olive oil: this recipe is only as good as the oil you use. DonÂt use cheap olive oil (or--horrorsÂÂlite olive oil.) Use a good green "primavera" extra virgin oil, no blends. Bertolli is fine. If you can find a French oil like Hilaire Fabre or James Plagniol, get it; itÂs fantastic. Variation 1: use walnut or hazelnut oil instead of the olive oil. Variation 2: for the vinegar, use half vinegar and half lemon juice. Trader Joe's has a pretty good selection of olive oils. Of all their varieties I have tried, I've never had a dud. Comments (25)If I use a bottle, then usually Kraft Golden Italian. I like their french too. We used to love the Creamy Cucumber but they changed it somehow and now it makes me gag. Same with Ranch. I don't know what ingredient does it, maybe the fake buttermilk powder or something? Same flavour is in sour cream and onion chips. BLARG! I like to mix balsamic vinegar, and olive oil then add some dijon mustard. It doesn't look pretty, but tastes wonderful. Expecially on salads with strong greens (like frizee, endive, etc.). Black Bean and Corn Salad Dressing 1 small clove garlic Pinch salt Juice 1 1/2 limes (about 3 tablespoons) 1/2 teaspoon kosher salt (to taste) 1/4 teaspoon chili powder 1/4 cup extra-virgin olive oil Salad 1 cup fresh corn kernels (from about 2 ears) 1 orange bell pepper, diced 1/2 small red onion, finely chopped (about 1/4 cup) 1 tablespoon extra-virgin olive oil 1 (15-ounce) can black beans, drained and rinsed Kosher salt Freshly ground black pepper 1 cup cherry tomatoes, halved 1 avocado, halved, seeded and diced 1/4 cup chopped fresh cilantro, leaves and stems Make the dressing: Smash the garlic clove, sprinkle with the pinch of salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic paste, lime juice, salt and chili powder together in a bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream. For the salad: Cook the corn, bell pepper, and onions in the olive oil until beginning to brown over medium-high heat in a skillet. Toss in the black beans and cook until warm.
