Comments (34)I learned this after googling help when using a bundt pan. Cake kept falling apart when I took it out of the pan, chunks missing here and there. Then I read that after you grease the pan sprinkle it with sugar. Pour some in the pan and shake it around so the entire surface is covered with sugar. Haven't had a cake stick to the bundt pan since. I'm sure it would work for a loaf pan too. I said I googled this but now I'm wondering if I actually came here to ask? Comments (10)Martha, you are the only other person I know who has said they buttered banana bread. We also buttered bran muffins, biscuits and cornbread. Seagrass, I usually add nuts, but I've never used cream cheese. Now I'll have to try it. Maybe toast it? Comments (22)It should be fine either way. I like a lighter bread so I drain off the liquid, but if you prefer the more moist, dense bread, include it. Somewhere I read a recipe where they microwaved the bananas to get the liquid off. An alternative was to freeze, then separate the liquid. If I remember correctly, they boiled the drained liquid to half, this was to increase the banana flavor. I keep meaning to try that part of it, but always forget....See MoreSunken top on Banana Bread
