Comments (87)Biochar, sea minerals, magnesium, azomite, livestock manure, organic materials like leaves and grasses, kitchen garbage compost etc are all good soil ammenents. Soil tests are a good idea because they give you an idea of your npk levels. I know It's possible to apply to much of anything so I do everything in moderation. I compost wood chips for my fruit trees. Wood chips are great compost but they are the wrong type for a garden. Soil organisms such as earthworms, Fungi , bacteria etc play a primary role in improving soil so organic materials in the soil need to be high so they have something to feed on. Nitrogen breaks down organic matter such as wood chips but the nitrogen is bound up in the process and unavailable to plants. The point is even when micro and macro nutrients are high it does not mean those nutrients are available unless they are balanced in the correct quantities. I would recommend a good book like " soul of the soil" - by gershuny, acres USA etc.. The original study many years ago on sea minerals bear in mind the entire crop was killed. He applied to much to his corn. The next year he scaled back and had significant yield improvements....See MoreCoarse salt = sea salt?
Comments (5)Oh, yes!! I agree totally with FOAS!! On a new recipe where I'm not sure of how salty the ingredients are, I always scant the salt measure. One can always add salt, but there's no way to subtract it. This is billed as a traditional recipe, so may actually be accurate. The massive amount of salt is likely meant to be a preservative. The intro does say to be careful not to use other salt when using the pepper paste. Next time, you can make it to suit yourself with less salt if you're canning (though check with canning experts to make sure that will be okay) or refrigerating it. Sea Salt is coarse, but there are so many different kinds and sizes of salt that unless the type is very specific (such as table salt or kosher salt), I prefer to weigh it. Unfortunately, most recipes don't have accurate salt measures at all, let alone weights. I prefer when they say salt to taste. That means just enough salt so that it doesn't taste bland. Unless the flavor of the dish is supposed to be salty, you don't want saltiness to be part of the actual flavor--or are using it as a preservative. Comments (34)lette_04- I've been through several brands of salt grinders over the years. My first grinder I bought from King Arthur Flour Company was an Emsa, but it had a small chamber and was difficult to change the grind. I now use it to grind whole nigella seeds (a nice change-of-pace taste to black pepper). We had a set of small and large G'Rabbit grinders (has ears that look like a rabbit and they were almost a kitchen "pet"). Very easy to use with one hand, but we managed to break the ears on one of the small ones, and both sizes were messy. Fast forward several years.... I have a pair of OXO salt and pepper grinders I really like, and OXO has several different styles available. The ones I have are at the Amazon link below. I purchased mine at K-Mart, on sale, for about half the Amazon price. You can easily change the coarseness of the grind with your thumb (5 choices of grind). They are easy to use if you have a small hand (with a nice soft grip), they don't take up much cabinet space and are easy to refill.
