Opinions wanted! Backspalsh advice much needed

Hi there! We are redoing our finished basement and have added a kitchenette - fridge, dishwasher, full sink and an island. See the attached picture! The cabinets are grey, the walls are a very, very light griege, the floors are a grey toned oak luxury vinyl plank and we are doing Carrara Grigio Quartz (white with black streaks) for the countertops (which are not yet installed).

BUT what do we do for the backsplash? Our basement does have windows and a walkout, so there is some light (this picture was taken during the day with no flash). I was thinking of a reclaimed wood - but worried that style will not last. Also though of white subway tile - but was concerned about the counter to ceiling look there. Like it might be too much and too shiny.
