Lemon Cranberry, White Chocolate Chip Cookies

Lemon Cranberry, White Chocolate Chip Cookies

Do not make these cookies if you are on a diet! Restrain yourself from
eating them until they fully cool. The cranberries stay hot for quite
some time.

Ingredients:

  • 2 sticks unsalted butter
  • 8 ounces of cream cheese
  • 1-1/4 cups granulated sugar
  • All of the zest from 2 large lemons
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 3 cups all-purpose flour
  • 1 cup Quaker Oats
  • 2 teaspoons baking soda
  • 1 cup frozen cranberries
  • 1 cup frozen white chocolate chips

Process:

Cream the butter, cream cheese, lemon zest, and sugar. Add eggs and
vanilla, and mix well. Mix the flour, oats, and baking soda in a large
bowl. Then mix in the cranberries and white chocolate chips. Add to the
mixer and combine. Roll into balls 1" in diameter. Bake at 350 for 10-12
minutes. Yields 4 dozen cookies.
