Hats off to the Japanese for making eggplant the way we like it. No slicing, p-towel salted, pressed, then pan seared, cheese, tomato sauce, absorbes oil and so fatty...

Sure, eggplant parm is good but packed with calories the Italian American way...

Not sure why this took me so long to figure out...20 years ago our favorite restaurant served this as an app. He retired. I've made this three times in the past two weeks.

I blistered them on my gas stove-top, but in the oven works just as well.

Just like roasting peppers. Blister and let steam so the skins peel off easily...

Easily cut into silky cubes, set aside and add a broth...I use miso. Then into the oven to heat and toast. Bread crumbs?, garlic, ...

I just use a miso glaze/toasted sesame seed, green onion and miso broth,... and bonito flakes to the table.

Zero fat, no oil, no fuss. Gorgeous silky eggplant.

(I've not noticed anyone using bonito flakes but Lars. Not at all fishy...just a good umami flavor with many dishes...I keep mine in a ball jar in the fridge)
