What's for Dinner #358
Comments (100)Great meals while I’ve been away : ) Ann_t, amazing you made gravy from a rotisserie chicken (bones) and I’m noting that! Thanks for explaining how you accomplished it! Standouts for me: Ann_T’s grilled pork chops – I’ve yet to grill chops, but that’s on my grill list next, chops in freezer await! Hope they taste half as good as yours look! Neely, everything on your lamb plate looks delicious to me. Annie, your Salisbury steak (I know what it tastes like!) makes my mouth water, and again with the cauliflower rice – I need to make some as I love it (clearly, more so than you!). Sleevendog, wish you’d posted your London broils, but the I’m thinking baked cod over white beans is a perfect flavor match – again something I’ve never tried. I’m incredibly envious of your outdoor oven! How wonderful that must be to use! Relying on the grill quite a bit now when I have time to cook: Thursday night was Ann_t’s Greek ribs again… so tender and we love the flavor. Friday night’s meal: I’ve never grilled salmon, and though I left it on a bit too long (DH’s was perfect but larger) this was the best-tasting salmon we’ve both had. Marinated for a couple hours in sesame oil, fresh grated ginger, soy, minced garlic, and a smidge of dark brown sugar, seasoned with lemon pepper before grilling. Could eat this every night I think. DH requested grilled corn again, and the potatoes were also grilled in a grilling basket. Easy meal. Enjoyed a sunset margarita before dinner just because it was Friday : ) Yep, resorting still to plastic cups. Made myself another half drink as it was so refreshing and the weather lovely. Saturday was awful to-go pizza… long week, hard day. Sunday finally tried the pellet tube as a smoker substitute, and other than initially not grilling the chicken long enough due to poor temp probe placement, it was wonderfully smoky! ETA: The not-clear juices running from the chicken should have been my first clue it wasn't to 165 F! Needed to cut back my mint as it was crowding the rosemary, so made glazed carrots with mint. Potatoes in the electric skillet this time, and more time consuming than on the grill, not nearly as good....See MoreWhat's for Dinner #361
Comments (106)Thank you again Sleevendog! Your steak cubes are clever – and I bet it’s lovely to sear them with that shape! I’m not suffering envy from your tomatoes at this time as my neighbor gave me some lovely tommy-toes. I’ll be envious later, though! I ransacked every darned bin for panko, and I can’t find them so I guess I didn’t leave them unpacked… I’m going to pick some up today as I’d love to try your risotto idea! Of course, then I’ll find my panko crumbs. Jasdip, those are some wise words regarding what not to tell DH about ingredients in dishes (especially seafood)! He gave me the stink eye for weeks after pho ga, even though he thoroughly enjoyed it. What’s up with that! If it’s not ‘fried taters’ (which he loves to call them just to bug me) it is alien to the man! Eh, he’s getting better though : ) I should have his palette and mind trained in another 10 years… Cathy, I gotta make this short as it’s a long running about day for me, but you had me in stitches as I read your post last night! Have I told you lately how much I adore you?! Thank you for posting your rub, and I did do the quid pro quo thing (and immediately my mind jumps to Silence of the Lambs) and posted the herbed potatoes in a thread called: "Share your hot weather simple recipes", but I’m not seeing it show up. I’ll give it a day because sometimes they pop up later. Darned Houzz. It was listed in my Activity, now it’s not. Argh! Ok, I’ll bring the potato salad so long as I know your ziti is awaiting. And I'm bringing several bottles of wine. Expect an extended stay! …although, now that I’ve seen your hand… LOL! BTW, I was NOT distracted by the background ; ) I was distracted by your pizza. Oh gosh what I wouldn’t give for that pizza… Neely, you and others are gonna have to stop commenting so nicely about some of my photos – I take them in a dimmed room torn-apart room, without my readers (glasses) so I never know what they look like until I upload them, and I’m getting the big-head (huge grin!!!). Thank you. Honestly? Everyone’s meals always look so much tastier than mine to me, and your spaghetti with Italian sausage – just the perfect amount of sauce, onion, sausage, parm ratio… Gosh that photo is killing me as much as sleevendog’s lobster roll! I love spaghetti. Ann_t, are you out there? I hope all is well. I’ve not seen one of your pizzas or baguettes in far too long! Annie, quick mention here – I do prepare cheese, fruit, bread, crackers and relish trays all the time! DH and I both love relishes : ) And like others here, I continually admire your dedication to healthy eating. Poofed ribs, corn/tomato/onion/basil salad (either posted in a thread or will re-post tomorrow because Houzz is spacey), and julienne 'taters for DH ; ) No pics, we ate it too fast!...See MoreWhat's for Dinner #371
Comments (102)Oh geez, I'll never catch up! I spent all day canning, just took the last jars of pickled beets out of the canner about 20 minutes ago. Today we canned pink half runner beans, royal burgundy beans, pickled beets, made a gallon of refrigerator pickles and put 29 pints of sweet corn in the freezer. Then we ate leftovers, LOL. Jasdip, the "painted rock" is a big thing here. The kids (and adults) paint rocks and write on the back of them where they are from. Here it's "RockinNC" for "Rock in Newaygo County". There's a Facebook page, I guess. Anyway, the game is to find the rocks, then rehide them. If you find one that really appeals to you, then you keep it, but you have to paint a different one and hide that for someone to find. The kids have a ball, looking for rocks everywhere we go. I'm glad you found that one and it spoke to you, it's sure a nice little "pick me up" when you least expect it. 2many, I do like icing, but not on cinnamon rolls. We always ate them with butter, and that's the way I still like them! And I'd never, ever laugh at your garden. Gardens are all wonderful, I love 'em all! Sleevendog, sorry about that cast iron. I know it can be replaced, but sometimes old favorites are just right, and not always easy to find another one. I do like your spice cabinet too, mine is deep, although it has pull out drawers, and it's always a jumble, no matter how many times I organize.... Neely, I'd eat those pancakes, without a doubt. I did have to laught about the smoothie, though. lizbeth, come raid the garden any old time!!! Annie...See MoreWhat's for Dinner 394 2021
Comments (100)Good news. Just called Dad, and Mom loves the woman helping them. (i need to get her name and number). -The one major hurdle we won from our visit last month. She was in elder care and hospice for 20 year before staring her own business. She dropped Dad off at the pool for his swim, then took Mom for a blood work appointment, then picked up Pop....stopped by the grocery that Mom has not been to for 2 years...then cleaned the house, then their upright freezer went out...so she helped organize and toss old stuff. Helped Mom organize her kitchen fridge/freezer, then my Misfits box arrived, 😂. Oy. Helped to put that away. Then helped Mom with her bath. Brilliant. She starts all new ciients herself, then gradually can introduce an employee for assistance if she cannot meet the need that day. She so understands the eldery hesitancy to have a stranger in the home. I am so relieved. It has been so stressful especially during Covid lockdown. He was driviing and not safe at all. He causes an accident and mom is at home alone with demetia...his license expired and no way will be renewed. (we considered taking the keys to the car)...to force some outside help. I have three older siblings that are 'dough head' about the sitaution. They are all retired and i am the baby 8 years yourger so where are they? jerks, lol....See More- 8 years ago
