Which design do you like for our long, narrow kitchen?

We are looking for advice on redesigning our kitchen space. We would like to take out the mudroom which has become a despised dump zone and using that available space to expand our kitchen. Our plan is to put the fridge between two large closets (which will replace the function of our mudroom but have the same appearance as kitchen cabinets for continuity). The rest of the kitchen is tricky. It will measure 11x21 feet. There is also an attached breakfast nook which is 11x9 feet. The problem areas are the windows in the breakfast nook which are quite large and low. They start at 28.25 inches off the ground. So the wall space underneath is minimal and not very useable, unless we put a window seat with storage there. Also, we have two outside doors into the kitchen- one from the garage and one that we don't really use into our sideyard. (Our composter is here, but that can be moved). We're tempted to brick it up and put a window there for more natural light. We've come up with two design ideas, one of which is a relatively new concept therefore the lack of detail. Is the first kitchen too widespread? There is about 7 feet between the two countertops so it doesn't seem very efficient. Is the second kitchen too crowded? We allotted for 42 inches between the island and wall cabinets, and 36 inches between the island and blank wall. We love the idea of a long island, but it eliminates an entire row of upper cabinets. It also leaves a blank wall (the garage wall) which could be fun to fill with a cool mirror, artwork, hanging cutting boards, some high floating shelves/plants. The dotted X's show the walls we want to knock down to open up our dining room/family room space a bit. We'd love to move the bathroom for a totally open concept feel, but have a hard time putting it anywhere else in the house that isn't a major eyesore. A little more about us- we are a family of 3, (mom, dad and 10 year-old son + 2 dogs). We are not planning on growing our family any more. We'd love any and all input. Thank you in advance!!!
