Updating my 1970' paneling in my open design den, dining,& kitchen

My family room, dining room and kitchen are an open concept design and all are paneled. The family room has ceiling beams and fireplace mantel that are stained like all moldings, doors, and kitchen cabinets to match the paneling. I have finally convinced my husband that we need to update and paint the paneling. My problem is that I can't decide whether to just paint the walls and leave everything else stained or paint part or all of the rest (definitely not painting kitchen cabinets). Am thinking about just painting the walls and leave everything else stained. The stain is a light walnut, so I think painting the walls alone will really brighten things up but -- will that defeat the "update?"
