Not exactly Red Velvet Cookies...

OK, is it just me or do other people start a recipe just KNOWING that they have an ingredient, and then realize they don't have that ingredient at all?

This was a new recipe that Ashley wanted to try, she just loves red velvet cakes, cookies, doughnuts, whatever. So, Red Velvet Cream Cheese cookies, that seems very Christmas-y, all red and stuff, let's do it!

I get all ingredients in the mixer and get ready to add red food coloring. What do you mean I have only 3 drops of red food coloring? Must have been the frosting for Santa cookies. OK, we'll make them green. But I want them GREEN, not army green, and I don't think I have that much green either. Maybe we should make them blue, we have lots of that. It's perfect, another color on the cookie plate and I have LOTS of blue food coloring.

Does everyone else also know that blue food coloring when mixed with cocoa flavored cookie dough turns green. And not a pretty green either. No matter how much blue food coloring I added, it didn't get better, and so our cookies are green. Army green. (sigh)

Elery said they reminded him of one of the old Hostess chocolate cupcakes, not very chocolate-y, but lightly chocolate with that cake texture. We put extra filling in them because, well, you know.

They are actually very good, even though they aren't Red Velvet, or Blue Velvet, or even very much Green Velvet, LOL. Maybe I should have rolled them in green sugar...

LOL -- red velvet is my husband's favorite cake and as a new bride, I asked his teenage sister for the recipe and she sent it to me. It called for 3 OZ. of red food color -- well, the amount in the bottle in the food coloring sets wasn't 3 oz. I don't think there was 3 oz. total in the set. So I figured she must mean 3 drops. Nope, wasn't red -- wasn't really pink. So I thought 30 drops -- that it wasn't 3 oz -- it was 30 and somehow a z was in there. Nope. But it was pink at least. And so the first one I made was a "pink" velvet. When I talked to him Mom the next time I saw her she told me you had to buy a BIG bottle of RED ONLY food color to make the cake -- oops!

Martha, every time I make a Red Velvet cake, I cringe at the amount of dye that goes into it, but no "natural" ingredient actually turns it red, at least none that I've found.

I put in a LOT of blue, but it's still green, LOL. I could live with that if it was a prettier shade of green, but these are just an ugly color.

Ah well, that'll teach me to not assume I have an extra bottle of anything, and to actually check before I jump into a baking project.

Nah, never mind, it won't, but I'll always think I should. (grin)

Kristy, They were called Gobs. My Mom used to make them every year for our family reunions & lots of times in between (since I was a scrawny little kid). I still make them. Email me if you want the recipe. I just looked at it & was trying to decide whether to make some for Christmas. Linda

We have always called the type of icing for Red Velvet Cake White Icing. Here is the recipe I have used for years with notes of some of the additions I have made to the frosting at one time or another. This icing is very easy to make. White Icing In a saucepan mix well 1/2 cup milk and 3 tablespoons flour. Cook, stirring constantluy, until mixture becomes paste-like. Chill in refrigerator. When ready to prepare icing, blend 1/2 cup margarine, 1/2 cup Crisco, 3/4 cup sugar, and 1 teaspoon vanilla. When well blended, add the chilled mixture. Beat about ten minutes until well blended again. Add vanilla and beat for another 5 minutes. Spread on cake. Note: Additions I have made from time to time depending on what I wanted. Really the additions are limitless. -1 1/2 teaspoons vanilla extract -1 1/2 teaspoons espresso powder -2 t cocoa

I just wanted to tell everyone that I made the frosting this afternoon, and it turned out very well. I made three layers, but I split two of them and frosted between them, and that made it high enough to fit in my friend's cake carrier--couldn't use the third layer. I found it really hard to frost without getting red crumbs everywhere! LOL I decorated it with a fresh red rose and three white flowers (lillies maybe) that were in the bouquet I bought at Aldi. I put the green rose leaves all around the bottom of the cake. I did this mainly to make it look neater, but it turned out quite nice. Yes, I used granulated sugar. I'd heard absolutely not to use confectioner's and followed the recipe exactly. The only thing I did was to double the frosting recipe, and I'm glad I did. I had just a dab left and covered the third layer with it, and let DH try it. He thought it was really good, so hopefully my friend likes it. Thanks for all your help, ladies!!
