what's on the holiday menu?
Comments (59)well, we do the traditional seven fish dinner on Christmas Eve for 27 people! Start with shrimp cocktail then the pasta: stuffed calamari in red sauce/gravy and anchovies sauteed in garlic, S&P, and evoo, both served over linguine... a red and white pasta then the fish course: crab imperial, scallops, smelts and salmon, this is served with garlic bread, an olive tray with mozzarella balls and roasted peppers, cooked greens, broccoli rabe & baked artichokes. then dessert: cannolis, red velvet cake, cheesecake, cookie trays and chocolate cream pie. coffee and espresso good wine served throughout!! For our Christmas dinner, just us 5 traditional thanksgiving dinner, but DH & DS want some beef, so they have filet steaks. dessert: leftover from the night before the feast of the seven fishes originated in southern italy and you can have 7, 9 12 or 13 fishes. from what i read and heard, there really is no set number. it can range from 7 for the days of the week or the seven sacraments. 9 im not sure, 12 - for the 12 apostles, 13 - for the 12 apostles and Jesus. you can have any type of fish, depending on availability. if anyone has any other info that would be great or if i am wrong, just let me know. i hope everyone has a peaceful and joyous holiday season. enjoy your family and make special memories to share with your future generations!!!...See MoreThis Cake's For You @mtnrdredux
Comments (10)It has a caramel layer and a nut layer. And it's signed LOL. Can't tell the other flavor and they don't give the recipe. I think I tried every hard thing. Made Buche de Noel for Christmas for years. Fondant. Puff pastry. Croissants. Hand-dipped chocolate truffles. That ice cream cake this summer took longer than any of those. I even made the science project sour dough bread after I almost put a hit out on the author of the original recipe which didn't work. The only thing I don't especially like making is cookies. I'm planning a hack on the ombre cake. Need to head over to the CIA and see what they have in their baking department. Think I saw some of those cool mold pans there....See More"Bucket List Recipes" - those that intimidate us
Comments (88)The church my parents attended published a cookbook one Christmas with mostly Chechoslovakian and Polish recipes, and Perogis were spelled with an 'o'. I still use it for a variety of cookies I bake at Christmas that are probably not easily found these days~Ice Box cookies anyone? Nope, the onions do not overshadow the flavor, but Mom only added them to the potatoes. She sauteed(slightly)the perogis in butter which was first browned, then added. Mrs. T's just don't do it. I did find them handmade in a small market, but they were still too doughy. Maybe it's the freezing? There were never any leftovers at our house to freeze, so wouldn't know if freezing would compromise the texture of the dough. And I do remember Halupki, but not in soup. I make them but call them pigs-in-the-blanket. My best friend's dad, also Chech heritage, would make them and add to soup, and she said it was to 'strech it out for a few days'. lol So annie, do you just add the 'lone' ingredients~cabbage, ground beef, rice~to tomato sauce? And what is Krustchiti? Maybe I knew it by a different name. There's also a 'sour gravy' dish that my sis makes using pork chops. Ring any bells? Mimipadv, is that cabbage and noodles? That I do make! And speaking of pie crust, mine is a joke! I buy Marie Calendar's, frozen. ;)...See MoreBouche de Noel question
Comments (20)Good advice, that. I've managed rolls with ordinary cake, and it does work, but obviously there are better textures for the purpose. ;) I put too much trust in a traditional recipe for a cake that only needed to be bent, rather than rolled, and I think It would have been better with an egg sponge. The cake mix did what you set out to do, however, which was proof of concept. You baked and rolled it successfully. If, after chilling, it seems like a mess, you can pull it apart, and make cake pops or balls. Maybe reduce the amount of filling to make the balls, then frost the outsides in the leftover filling, and roll in sprinkles, crushed nuts, coconut, an icing that'll harden, or that sticky jammy glaze....See MoreUser
