Comments (33)It seems as if blooded behinds are fairly common? This is my first year raising turkey. I lost one because he jumped out of the pen and froze during the night. All of a sudden they started pecking at 2 of the other birds pulling out their tail feathers. One died from the shock, the other I rescued, Now in my lounge under a heat lamp all by it;s self. Comments (7)Eric, last summer early in the morning about 8am I heard my Tabby cat growling and looking out the front door. Sure enough, there was a turkey walking around and pecking at stuff in the ground, just muttering to herself. I thought I had heard turkeys in the back meadows, but this one decided to take a stroll out in the open. I'm rural, so we get lots of wildlife...last nite the coyotes were running through the backyard and howling, but you're pretty much in the city limits, aren't you? Comments (9)As long as you meet the NCHFP guidelines there is no problem. And I sure wouldn't dump it. It isn't like you are going to drink it right out of the jar anyway. It will be cooked before consuming so you are covered either way. The Ball Complete Book has a few other differences in it too but in this case I think it all depends on what the actual goal of the recipe was - straight stock/broth - or meaty stock. Plus how much actual meat was added vs. liquid would also influence processing time. In other words if your goal was to can turkey (in stock) then you'd use the meat times. If the goal was turkey stock (with some meat in it) then use the stock time. See what I mean? Dave...See More
