Happy Birthday, Mom, have a raspberry tart!

My raspberries have finally started to yield a few berries, I planted two years ago and didn't get any last year. So, I've been "hoarding" them in the freezer, to surprise Mother with a raspberry pie at Thanksgiving. I guess I didn't need to, because I have two quart bags full in the freezer, enough for her pie, and I went out and picked some more. Not enough for a pie, but enough to make these:

I was in a bit of a hurry because I was simultaneously canning tomato sauce, but I couldn't let Mother's 82nd birthday go by without a treat. I had some puff pastry in the refrigerator, so I made a raspberry filling and started rolling the puff pastry. I didn't seal so well, as you can see.

We took her out for supper, her choice, and she picked the local Eagles. (ahem) They have a Friday Fish Fry, and so that's where we went, but she got raspberry tarts for dessert. When I took her home she had eaten two, and had raspberry filling on the front of her sweatshirt and a big smile.

Lars, I think they would have been even more delicious with a good pastry instead of the refrigerated puff pastry, but I had kind of a time crunch going on. She liked them well enough that she handed me the empty container today and asked if she could get a refill, LOL. Since she's 4'10" and weighs about 90 pounds at her heaviest, I fuss over her diet, she seems to get smaller every time I see her. So I'm happy to take any opportunity to feed her, maybe I'll take your lead and make that cream cheese pastry this weekend. She loves pie crust, so she'd be happy.

Shhhh! Annie, they're "bursting with flavor" not "didn't seal well". I was thinking when I saw the picture before I read your post that they looked inviting and delicious in a way that they wouldn't if all that lovely raspberryness weren't peeking out. :)

AWESOME that your mom had such a great finish to her birthday out!

Annie I completely agree with plllog, I'd not have recognized them as flawed had you not mentioned it. They look delicious especially because of it. Happy Birthday to Mom!

Thanks for your comments, everyone. I have been going non-stop since I posted this, with 2 soccer games, a baby shower and a kid's birthday party on Saturday, and my son's First Communion and ensuing party on Sunday. Thankfully, my in-laws made the ham and a fantastic lasagna, along with eggplant fritters for the party yesterday. I made a ceaser salad with homemade ceaser dressing, Sol's honey rolls, shrimp cocktail, pineapple upside down cake and Amish Friendship bread. My mom made insalata caprese and a blackberry cobbler. And I purchased frozen Torta Stella from Costco as an additional appetizer. We had 17 adults and 4 kids. Everything turned out so tasty. Nothing quite like a homemade lasagna from an Italian mother-in-law. And when I get her recipe for those eggplant fritters, I'll be sure to share. They were inhaled! Nancy

No, please don't delete it. I never go to the Kitchen Table forum...maybe I should, if posts like this are there. How wonderful; thanks for sharing. Rather sickening sentiment of your brothers, though--but it's good to see you all didn't let it spoil your time. What a fabulous idea to see the Cirque Odyssey with her! I would suggest Hawaii over Mexico. My friend went to Mexico with her parents and both she and her dad came back with digestive problems. The water in Mexico is not drinkable. With small children it will be hard to control. If you are on a budget, Europe can be very expensive with the weak dollar. You can check out the different islands in Hawaii and see which one suits you best. Oahu is a lot of buildings and tourists, but a lot of night life action. Maui has nice beaches and is not so contained in one stop full of tourists (depending on where on the island you want to go, Kona (the big island) is quieter than Maui but the beaches tend to be rocky unless you stay at a resort where they have shipped in sand. Kauai is even less tourists and although I haven't spent a lot of time there is suppose to be lush and beautiful. It tends to rain more on this island. Yum! My raspberries aren't ripe yet. Actually I haven't checked them in a while, maybe they are! I need to get some puff pastry & try my hand at it.

I think they look rustic, and that you did it like that on purpose. Tasty. Love the sugar crystals dancing on top. Give your mom an extra hug from me for her bday!

Those look so delicious!

Years ago, Pepperidge Farm had frozen raspberry turnovers. You had to assemble and bake them. They were soooo good. Haven't been able to find them in years.

FOAS, I'm happy to see you here again, don't wait too long to come back.

I'll tell Mom that everyone on the Cooking Forum says "Happy Birthday". She asks about you often, and wonders if I ever see or talk to you still. I assure her I do. She met Sherry and Peppi at the Food and Wine Show in Grand Rapids, and she met Peppi's Dad and Kim and Nancy when Elery and I got married and I think she met Cathy too. So, she feels like she knows you, I've talked about everyone so much.

Sol, she lives close to Mt. Pleasant, as you know, so she says you are her neighbor. She is praying for your family in Cuba too, and hoping you hear from your own Mom soon.

I don't have any puff pastry in my freezer, but I think I will try making something like that using a cream cheese pastry. I've used that before to make turnovers, and the photos look very enticing! I'll have to buy the fruit, however, but I'll check the farmers' market this weekend.
