Canning homemade tomato sauce

Emily Tanner

Hello! Yesterday I made and canned homemade tomato sauce for the first time, without doing the correct research first. My sauce, with added ingredients like onion and basil, and without any extra acid, is most assuredly UNSAFE for water-bath canning.

The jars are properly sealed and now sitting in my fridge. Any idea how long they will keep safely in the fridge? My assumption is that with the proper sealing (no air coming in) and the temperature (anything in there cannot grow) the sauce should stay safe for an extended period, but I am not sure. I intend to use it all within the next four months. Any insight would be helpful.
