Interesting documentary on cheese and whey

Food Unwrapped, a weekly documentary had a segment on Greek yogurt. The host was in Greece and they were draining yogurt. The resulting whey which we've been encouraged to eat over the past few years. Probiotic drinks, kefir, etc.

But in Greece it's illegal to put the whey down the drain, and the food producer would be shut down.

This whey is acidic whey and it has a high PH level and will ruin the eco-system and causes environmental damage. The fish would die, and we as humans shouldn't be drinking it either. It's a huge problem disposing of the whey and the U.S. is the largest producer of acidic whey.

Wow, we shouldn't be drinking the whey!!?? Most of us (me included) use it in smoothies, make other drinks out of it, cook with it, etc etc.

Further on in the show, they turned the acid whey into edible cheese by combining it with butter, an acidifier to lower the ph, and sweet whey. It was processed and turned into cream cheese to make cheesecake, etc.
