I need help asap on a Lime pickle recipe

I'm desperate for an answer please

I'm making Lime pickles and put them in to soak in the lime water about 8:30 last night.

They are supposed to soak 24 hours. Will it hurt them if I let them soak in the lime water until tomorrow morning like around 6 am. Otherwise I'm going to be up most of the night doing the 2nd day process. Thanks in advance, I don't want to waste these nice cucumbers, but I don't want to be up all night either.

24 hours is a extra long lime soak to begin with, 12 hours is the norm. So the longer in the lime they soak the harder the slices end up. You may well end up with pickle chips that shatter into pieces when bitten into.

So your best compromise option is to do all the rinses and cold water soaks tonight. Get them out of the lime. Have no idea what recipe you are using or what is involved in the "2nd day process" but do get them out of the lime and rinsed at least once. Let them soak in the fresh cold water in the fridge over night and then rinse again a couple of times tomorrow and finish them tomorrow.

Have you made limed pickles before? If so I assume you know the hazards of working with pickling lime and why use of it has declined sharply in favor of other methods?

Better planning next time, yeah? ;-)

Thanks Dave, I will do just what you have suggested. I appreciate the help. I have made these several times, but no I did not know of the hazards until tonight when I did a search to see if I could find a solution before putting out the APB!!! If I understand, there could be an issue with the preserving process if they are not rinsed thoroughly, is that correct? Thanks so much for your help, I have read many, many of your helpful posts through the years and your knowledge and willingness to share is appreciated.

"3 1/3 c vinegar and 7 1/3 c water" (they are also smaller packs and make less pickles). That is a 50:50 (even a little better than 50:50) mix and would be safe. Erica - it finally dawned on me during supper just how flat out wrong my math was when I said that. It never was my strong suit and age has made it even less so. I still feel the Mrs. Wages mixes are safe to use because of the long established experience with them and their added citric acid, but please disregard my flawed math assurances when making up your mind, ok? Sorry for the confusion. Dave PS: yes on the Annie's salsa question assuming you use the full cup of acid (vinegar, bottled lemon or lime juice).

highalttransplant - we aren't going to be able to make you happy today and I understand why but please don't go looking for problems where none exist either. The real problem is that you jumped into a recipe you didn't understand upfront and then, rather than postponing it, you went ahead. And then when msdonnie and annie gave you the proper instructions within just a few minutes, you disputed their advice and went ahead and did it your way rather than follow their advice. We have all been there and done that and yes, it is frustrating, but it serves no purpose to blame or question the validity of the recipe or the assistance offered by the other posters. For future reference, understand that needing to make extra brine for a recipe has absolutely nothing to do with the safety of the recipe or whether or not it should be trusted. Extra brine may be needed for any number of reasons beyond the recipe author's control - the size of your cukes, the size of the slices, the way you fill the jars, the way you measure, etc. etc. etc. And making an additional batch of brine, as it is called for in the recipe in use, does not alter the safety of the product in any way. It is just more of the same stuff. This need has been discussed here often and is discussed at NCHFP and last I looked in the front section of BBB etc. books. And unless it is a recipe you have made before and so know that extra brine will be needed and made a note to yourself about that, it is not a batch you make ahead to have on hand. You fill the numbers of jars that you can, seal and process them, keep the rest of the pickles hot in the pan and whip up a second batch of brine in another pan then fill and process those jars. These are all things that are learned with experience and patience but we learn best when we own up to our own screw ups and move on. Dave

Paula, You're welcome. I collect recipes and, especially, recipes that allow me to prepare/use the yummy veggies and fruits that we grow here. There's not much use in growing stuff if I can't/don't use it all. Of course, in a year when there's a bumper crop of this or that (and this year it is peppers!), using or putting up all of it can be quite challenging. I'm not complaining, though. Since we have severe summer drought here at least 3 out of every 5 years and garden production plummets accordingly, I have to make the most of the good years. I'm sorry your pepper year is over, but at least it has been a bountiful one! I harvested peppers for a couple of hours yesterday, and I am hoping (tongue-in-cheek) my plants freeze soon. I am really and truly running out of new ideas, so I am starting to do repeats of recipes I've already canned. We have had several nights this week where the temperatures went down to 42 degrees. Because we're in a low-lying frost pocket, we normally get patchy frost and plant damage at 38 degrees here, so our plants have survived by the skin-of-the-their-teeth this week. On at least two mornings, I looked outside at the early morning very-heavy-dew and thought we might have frost, but we didn't. We've been trying to sleep with the windows open, but at some point, one of us wakes up cold and closes the windows. Beginning today, we have a week-long stretch with lows in the 50s and highs in the 60s-70s, so I guess maybe my plants will live another week at least. Most years I want for them to last as deeply into fall as possible, but I'm so worn out from canning, freezing and dehydrating everything, that at this point I am almost (almost, but not quite) ready for a killing freeze. Have fun canning. I made salsa early this a.m. and probably will make a couple of batches of Habanero Gold this evening, but am spending the afternoon with our 2-yr.-old granddaughter, so no peppers for us this afternoon...it is Play-dough instead. sapphires, I don't even like bananas, I don't even eat banana bread, but I eat this cake. Ashley says it's her favorite, the best she's ever had and it is darned good. It was posted on the Cooking Forum by a former poster, J. Garner, who worked as a pastry chef. Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake) Jgarner-Cooking Forum (good as layer cake, elegant, delicate texture) mix together: sifted cake flour 2 cups sugar 3/4 c + 2 Tbs baking soda 1 tsp baking powder 3/4 tsp salt 1/2 tsp puree together: 2 large ripe bananas 1 c sour cream 2 Tbs or up to 1/2 c 2 large eggs 2 grated lemon zest 2 tsp (I left this out since I don't like the flavor of lemon with banana) vanilla 1-1/2 tsp soften: Butter 10 Tbs (5 oz) Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely. Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor Cream Cheese Icing Cream cheese, softened 8 oz. Butter, softened 5 TBS (2.5 oz) Sour cream 1 Tbs Vanilla extract 1/2 tsp. Rum 1 Tbs Powdered sugar 1 1/4 C (5 oz) Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. The need to rinse thoroughly is part of it - multiple rinses needed - and unfortunately many of the older recipes don't make note of that. " Excess lime absorbed by the cucumbers must be removed to make safe pickles. To remove excess lime, drain the lime-water solution, rinse, and then resoak the cucumbers in fresh water for 1 hour. Repeat the rinsing and soaking steps two more times" - at least.

But the primary concern is the "avoid inhalation" and possibility of eye or skin burns from what is a highly caustic substance. Something to take great care with.

Sally, I'm glad you got an answer, it's basically the same answer I gave you over on Cooking, but I didn't sit down until now, I've been making pickles!
